I bulk out the chicken with vegetables and sometimes pulses.
Two to three meals out of the breast meat
One meal out of the legs and wings
Strip the carcass and sometimes have enough to make another meal, usually bolognaise or curry.
Use bones to make soup.
I usually make:
Pies
Curries
Chilli
Soups
Risottos
Pizza toppings
But not all from one chicken, you understand! But this way the chicken lasts longer than if I'd have served some of it separately, say in a roast dinner. If I really need to stretch it out I put some of it in the food processor to sort of mince it, then add oats or lentils to bulk it out further.0 -
Chicken and mushroom pie, chicken peri peri and rice (like Nandos), chicken curry and rice, toasted chicken and mayo sarnie with a side salad, chicken fajitas or enchiladas.

We got one of the chickens in M&s Deal. We had roast chicken yesterday, used 1/2 breast, I picked the meat off the rest and made stock for soup. We will have thai curry with some of the leftovers and either a lunch each or chicken pasta with the rest. So 3 meal from a £7 bird wich we got in a £10 deal!0

I made this with leftovers from my last chicken and it was lovely, i almost can't wait to have more chicken leftovers so i can have it again:
Ingredients:
Olive Oil
2 rashers bacon, chopped
1 squirt garlic puree
Leftover Roast chicken
Leftover cooked broccoli
sml glass white wine
double cream
Pasta (any shape)
Black Pepper
First i put the pasta on to boil. I put a drizzle of olive oil in a pan and fried of the bacon until brown, then i added garlic puree, roast chicken and broccoli, and fried it off for a couple of minutes to cook the garlic and heat through the chicken/broccoli. then added the white wine and boiled off the alcohol and added the cream until it looked like a sauce and putted the drained pasta into the sauce. Grind some black pepper over and enjoy!0 -

Got a (happy?) chicken from Mr.T this time = it cost £5.74 or thereabouts, it weighs 1.88k.
We had to freeze it and it's still not thawed out completely after a day and half in the fridge.
It's big for the 2 of us so has to go a long way, trouble is, the last whole chicken we had, we were sick of it after 2 daysand still lots left.
But going to work with chicken sarnies is the bizz!

Hi, I made roast chicken yesterday and we had leftovers today but everyone found it quite dry. Are there any good recipes I can rescue it with for tomorrow night. It is for 2 adults a 3 year old and a 9 month old

If you add the chicken to a sauce it should taste fine, perhaps put it in a pie? There's an earlier thread with lots of ideas for using up leftover chicken so I'll add your post to it to keep the replies together.
