I did a rubber chicken hot pot type thing that went down really well.
Sliced and parboiled potatoes
made up a sauce from the stock, thickened with cornflour, a bit of single cream, some lazy parsley
a layer of onions in the bottom of the dish, then potatoes, chicken, sauce, potatoes, more sauce
topped with a mix of grated cheese and breadcrumbs for crunch
was delicious. And half has gone in the freezer and will be seen again!0 -
On Friday I bought a large chicken on offer at half price from Somerfield - cost £3.50. With it I have done this:-
- Removed both breasts and frozen them for use at a later date (one weighed 9.5 ounces and the other weighed 10.25 oz)
- On Saturday I roasted the "breastless" chicken in the remoska. Once cooked I removed all meat from the bones, then put bones back into the remoska with celery, garlic, onions and vegetable water from veg cooked the night before (I never throw this away), and cooked for a couple of hours
- Saturday evening dinner was pasta with sweetcorn, peas and shredded chicken.
- Sunday lunch was chicken soup from the stock I made in the Remoska with HM bread and a hefty steamed sponge & custard for pudding to fill up on.
- Monday packed lunches were pitta bread filled with grated carrot, cucumber and shredded chicken in HM minty yogurt dressing.
- Monday evening dinner was chicken & vegetable pie with mashed potato and vegetables.

I've just cooked my first ever roast chicken, and hubby has had some breast meat in a chicken sarnie, and DS will be having some with veggies in a minute, but what shall I do with the rest?
I thought I'd pull off the legs and thighs and use the meat from that in some kind of pasta/casserole dish, but am not really sure what to make. I'd like to make a rissotto, but have never made one before and only have normal rice. Can I use normal rice to make it?
Should we just use the rest of the breast meat for sandwiches? How long will it keep for in the fridge?

I'm sure if you search for the Rubber Chicken thread you'll find lots of suggestions for what to do with the leftover chicken you've got.
If you've stripped meat from the carcass, then you can make a good pan of chicken stock if you add a couple of litres of water, a chopped up onion and a couple of chopped up carrots along with some seasoning. Then use the stock to make a good pan of soup
Have you got pudding rice (short grain rice) in? That would probably work better in a rissotto than long grain rice.0 -

my kids are fussy eaters, yes i know my fault but there you go.
they will eat chicken - roast casserole, stir fry etc , so how can i make the chicken go further and which is the cheapes way to buy it. we are a family of 5 and my children are 17 14 and 4.
would it be cheaper to buy a whole chicken or chicken pieces0 -
I use mine to make chicken pasta bake. I usually cook some pasta and some brocolli if there's any left. Add some frozen peppers and mushrooms to the chicken. Add a tin of condensed chicken soup. Mix it altogether and top with breadcrumbs and grated cheese.
About 15 mins in the oven should do it.0
