    We're having chicken quesadillas tonight. Put chicken, salsa and grated cheese on one tortilla, press another tortilla on top, then fry each side for a few minutes and cut into wedges. Serve with soured cream.

    Not sure if this would be a waste with a bbq'ed chicken but my favourite recipe for using up chicken is a 'delia' one.

    Make a pastry case with cheese in the pastry.
    Fry off onions or leeks and lay on the base. Add shredded chicken on top.
    Make a white sauce and add some cheese and then stir a beaten egg into it once thickened. Add seasoning.
    Pour over onions/chicken and cook on gas mark 5 elec 190 for about 30 mins (fan assisted) or until set. Delish.

    my little ones know full well that they eat what theyre given or theyll go hungry. thanks for all everyones help. ive somehow managed to make-
    chicken and veg pie x 2
    chicken curry x 2
    chicken and leek macaroni cheese x 1
    cheesey bbq chicken wraps for everyones dinner tomorrow.
    And i've still got 2 thigh left so i'll have a go at that delia recipe. he he. theyre going to hate chicken soon.

    And don't forget that even the carcasses can be made into a litre each of wholesome, nutritious and relatively free chicken soup. My recipe should be at the end of the "rubber chicken" thread.
    The acquisition of wealth is no longer the driving force in my life. :)

    Evening

    On sunday I brought 2 ready cooked chickens. I still have loads leftover, is there anything I can do with it apart from throw it in the bin? Im exhausted from work so dont want anythin that will take too much time, and we have eaten dinner.any ideas?

    Put it in the fridge for tonight, it will still be there tomorrow or Thurs night to deal with, and still be fresh too.
