  • Hello,

    I buy whole chickens for my OH and I because they're cheaper and you get more out of 'em. You can boil the bones down to make a broth for soup, then freeze and use later.
    I also use leftovers in casseroles (like my noodle casserole recipe, I can post the recipe if you want).
    We also like to cut up leftovers and put it on a pizza. One of my favourites is to make BBQ chicken pizza (just use a smokey bbq sauce instead of tomato sauce, and add onioins, green peppers, cheese, and anything else you want). Yummy!

    just a few ideas of what we use a full chicken for ,dinner one baked potatoes use one chicken breast sliced with lots of veg ,one chicken breast for curry,strip the rest use some for chicken fried rice ,and then the leftover chicken for my fav chicken and leek pie ,these all feed a family of three and the pie we have when our grandparents are here and this feeds five of us ,the curry ,chicken fried rice and pie can all be frozen if batch cooking it all in one day .

    I got myself a chicken today as well. Had to go to Sainsburys for it unfortunately as our Tesco are manipulating sales figures to show poor sales of free range - they've been playing silly !!!!!!s like that for a couple of months now - it's very annoying! Anyway - ours will do a roast dinner tomorrow (Well, a sort of roast dinner - I forgot I'd got no potatoes!) then the rest of the meat will be stripped off and made into a big batch of chicken curry using some of the 10p creamed coconut. The carcass will then be cooked for stock, which will go in the freezer along with the curry.

    I assume you'll probably make a roast dinner first. Afterwards, boil up the bones with some herbs or a bouquet garni to make stock and either freeze it (in ice cube trays is good) or make soup by skimming off any fat then re-heating it with some chopped veg any a little chopped leftover chicken. I love pearl barley in chicken soup too.

    Risotto with leftover chicken, celery, sweetcorn, peas, onion, carrot and of course rice is very tasty and cheap.

    Or sweat mushrooms, make a roux sauce, add chopped leftover chicken, and use as a pie filling.

    That's what I normally do. If I have enough white breast left over, I use it for sandwiches on Monday.

    I am a single money saver living on my own, and have been spending a fortune on food, only to throw it away. I didn't have a freezer up until last week, and have recently splashed out on one. I live in the sticks, so my nearest supermarkets are Co-Op, Iceland & Somerfield. I am hoping to turn over a new leaf, and hope to cut down on my spending, and start baking and cooking in batches to store things in the freezer. I work shifts and sometimes the easiest option is to settle for a bowl of cereal or beans on toast for tea. However, I have noticed that Somerfield have a super roasting chicken on offer this week, so I plan to make myself a Roast Dinner on Sunday, I would be grateful for any suggestions and recipes for meals I can make with any left over chicken.

    Anyway, I have a recipe for beef, sweet potato and lentil stew, slightly adapted from my mum's recipe. This is enough to feed 4 hungry people for under £5. I have not priced, flour, salt & pepper, mixed herbs, bay leaf & worcestershire sauce as I presume most people already have these in their store cupboards and it was difficult to price up.

    Beef, Sweet Potato & Lentil Stew (mopped up with Irish Soda Bread)
    1 lb / 500g of Stewing Steak (£3.20)
    2 Carrots sliced into coins (0.16p)
    1 large Leek sliced into coins (0.26p)
    2 Sweet Potatoes peeled and cut into cubes (0.26p)
    2 large mushrooms sliced, or a handful of small mushrooms sliced (0.23p)
    1 Onion diced (0.11p)
    2 tbls oil (veg or sunflower) (0.02p)
    2 tsp Mixed Herbs
    2 handfuls of split red lentils, rinsed (0.10p)
    1 beef Oxo Cube (0.06p)
    Salt & Pepper
    3 tbls Plain Flour
    Splash of Worcestershire Sauce
    2 Bay Leaves
    Irish Soda Bread (0.69p)

    1) Set the oven to 180c/350f/gas mark 4
    2) In a large casserole dish place the carrots, mushrooms, leeks, sweet potato and lentils (uncooked)
    3) Put a tablespoon of oil in a frying pan, dip the stewing steak in the flour and brown/seal the meat in batches. Remove and place the meat on some kitchen towels to absorb.
    4) Heat the remaining oil in the pan and fry the onions. Add a tablespoon of flour to the onions and stir. Slowly add the beef stock cube made up with around 1 1/2 pint of boiling water. Bring the gravy to the boil and season with salt & pepper, splash worcestershire sauce, mixed herbs and bay leaves.
    5) Add the meat to the casserole dish along with the gravy.
    6) Place in the oven for 25 minutes, then turn the oven down to around 150c/300f/gas mark 2 for around 2 hours (or as long as you like).
    This dish is best served the next day, when everything has thickened. Remember to remove the bay leaves and serve with big chunks of irish soda bread to mop up the gravy. This dish is lovely on a cold day, especially after a long day at work.
