So, a bloke went into the shop and bought a chicken...

It was me.I was in ASDA and I saw the roast chickens, and couldn't resist. Now I know I should have bought a fresh one and cooked it, but I'm a bit pressed for time at the moment.
The main thing I want to do with it is make soup from the carcass. I have very fond memories of the turkey soup my gran used to make after every Christmas, so I need to have a go. :drool:
My first question needs to be asked before it's too late. I am currently working my way through the meat for sandwiches and snacks etc, and giving Spaghetti the bits I don't want. The question is, do I need to save any of the meat for the soup? Normally there'd be a reasonable amount left after I'd picked over the carcass, but with Spaghetti helping there really isn't going to be much left at all. :rolleyes:
I've got a couple of carrots, spuds and some mushrooms - oh, and peppers. Vegetable stock cubes etc. Anything else you think I might need?
I will need all sorts of help on this one.....

There's loads of ideas on here guys, I'm quite good at stretching a chicken but you've given me food for thought no pun intended.
When OH is cooking he has to always use up most of the meat on the one meal and then goes back nibbing all evening, what a waste, that's why he's much bigger than me:rotfl:

i usually buy chicken breasts to cook for sunday lunch but after reading about rubber chicken thought id give it a go.
so i plan to roast it tommorrow then make curry ,chicken pie and soup with leftovers . my questions are
> how long can i keep cooked meat in fridge ?
> if i make pie do i freeze it with pastry cooked or uncooked ?
