    When I cook a chicken it's usually for roast dinner, as soon as it's cool I strip all the meat of the bone & make chicken stock with the bones. I make the rest of the chicken into chicken ham & mushroom pie, chicken ham & mushroom sauce to go with pasta, special fried rice & chicken soup.
    I chop up the bigger pieces of meat to bite size, add cooked mushrooms & either cooked bacon or ham, mix together with a white sauce or a tin of condensed mushroom or chicken soup, put in an oven proof dish corev with pastry (frozen is fine, but defrost it first) I use half of this to make a pie & add a splash of milk to the rest & add it to cooked pasta & serve as a pasta bake. The smaller scraps I add to cooked rice, sliced onion, mushroom a few frozen peas, fry in a little oil & serve with cut up pieces of thin omlette. The last few bits go in with the stock, any elderly veg from the freezer, a handful of orange lentils & some pearl barley to make stoop. Stoop is a cross between soup & stew, best served with crusty bread.

    We have other threads on Rubber Chicken, so I'll merge this one, to keep ideas together.

    There's a thread here for alternatives - bored with rubber chicken.

    I'd allow your cooked chicken to cool, then cover and refridgerate. I'd take the rest of the meat off the next day and make stock from the carcase, freezing that if I didn't need it immediately.

    I'd make a pasta bake with cooked pasta in a dish, add shredded cooked chicken, and cover with a sauce (cheese, mushroom, tomato, etc).

    Hi MiasMommy,

    Once you've cooked the chicken you should cool it as quickly as possible then cover it and store it in the fridge or freezer.

    This is the way that I make a chicken and pasta bake. Boil the pasta in some salted water until it's cooked. Drain it and add it to a dish suitable for the oven. Then add your chopped chicken and any vegetables you fancy (broccoli or sweetcorn is nice). Make a cheese sauce and pour it over the lot. Top with breadcrumbs mixed with grated cheese (optional) and pop it into the oven for about 15 or 20 minutes or until it's piping hot.

    I have half a roast chicken to use for tonights meal. Any ideas? I would usually make either fajitas or a pie but don't fancy those tonight. I have most (well a good range of) ingredients.

    Failing that I would bag it up and freeze the meat for another day ;-)

    Onions, garlic, risotto rice, stock, mushrooms, peas, some white wine.

    Or basically whatever you fancy chucking in

    jsut wanted to add for those of us who like chicken

    In tesco today they are doign packs of chciken thighs and drumsticks (there was 5 big thighs in mine and 6 drumsticks) for £2 and the shelve was chock a block with them becasue everyone wanted a whole chicken. So ive grabbed mine and rebagged/broken it down in my freezer - 3 drumsticks to a bag, and two thighs in one, three in teh other.

    I'm ordering a whole chicken from tesco online and was wondering what is good to use for the rest of it.

    Is only me, so I usually have half a breast for a dinner, and then have everything left over. Anyone have any good recipes for stock, curry, risotto etc?
