This is one of my husband's favourite leftover meals.
In a saucepan cook some chopped mushrooms in a large knob of butter/margarine. Add flour to make a roux. Slowly add milk, mixing in well, to form a thick white sauce. Add a chicken stock cube and season with black pepper. Stir in chopped cooked chicken. Serve with boiled rice. You could also add peas and sweetcorn to the rice to count towards your 5-a-day!
Also good for using up leftover christmas turkey.0 -
Creamy Chicken Curry
Fry one onion and one cooking apple (normal apple will do) in approx 1oz butter
When soft add 1 heaped tablespoon flour with 2tbsp curry powder, 1/2 tsp cinnamon and 1/2tsp ginger and fry for a couple of mins
Add 1/4 pint stock made with cube, plus 1/2 pint milk and stir to make sauce
Add your cooked chicken plus 1 or 2 tbsp mango chutney
This is a fab creamy curry which my whole family enjoy and its so easy to make

how about a chicken lasagne?
Make a basic white sauce add a splash of wine to it if u have any left over!!!!!!!! Put chicken in a dish add (if wanted) spring onions, mushroom, or really tasty if they have gone a bit soft an avacado.
Put on layer of lasagne pour over sauce add a sprinkle of cheese and breadcrumbs and bake for approx 20-25 mins0 -
try jamie olivers website as it give a few recipes for left over chicken. I normally put smalls pieces in the stock (from the chicken carcass) and add diced potato or broken up spaghetti, mixed veg and a bit of olive oil.
Or rice, cheese sauce, veg (peas, mushrooms, brocolli) and grated cheese over the topSmile and be happy, things can usually get worse!0 -
Hello :wave: any little bits of chicken and veg from the Sunday dinner can also be mixed with herbs spices and breadcrumbed into little rissoles.
I have also used tiny bits of chicken to make Chinese Chicken and sweetcorn soup. Its dead easy: Boil a small saucepan of water with a chicken stock cube, black pepper, garlic, dash of chilli add the chicken, add sweetcorn then stir into hot liquid a beaten eg and keep stiring. Add a pinch of salt or soy to tadte and a pinch of sugar. I don't have the measurements because I cook by eye and taste.

I don't want to poison anyone so what would you do.
I had two pre-cooked chickens from Morrisons on Sunday. On Monday/Tuesday I made my stock, lazily not removing any excess meat. I removed all the meat from the stock on Tuesday morning and put it in the fridge to make a curry to put in the freezer. I forgot, as I have had poorly children. (On the mend now thankfully!)
So it is now Thursday and the chicken was cooked by Morrisons on Sunday, then cooled then boiled/simmered by me Tuesday and then left in the fridge...is it safe to re-cook, freeze and then reheat again?
Basically would you still make the curry to freeze or throw the chicken away? Meals for tonight and next few days all organised as lots of eating out for my birthday! Thank you
PS Asking here as I read lots of good advice here and trust you all...mad as I don't know any of you! If it wasn't for you lot I wouldn't make stocj or use rubber chicken! Or be able to have yummy hm hobnobs!Boo!:rotfl:0 -
i personally wouldnt eat it now as i think on the packaging it even states eat within 24 hrs. im not too keen on pre cooked chicks as you dont know how long they have been hanging around for or if they prepared it right without any cross contamination.0

I know don't normally have the pre-cooked, always try to have free range or organic but this was exceptional circumstances. But now , thanks to this forum, I try to get value for money out of everything which means using this if I can.Boo!:rotfl:0

I wouldn't eat it to be honest and I'm not normally that strict when it comes to things like this but it sounds a bit risky.
