  • We are a family of 4 - but ds1 eats as much as an adult.
    Day 1 - roast - 2 drumsticks, 2 wings, 1 breast and a bit - padded with Yorkies, stuffing, a few cocktail sausages etc,

    Day 2 or 3 - curry - 1/2 breast and most of thighs

    Chicken paste for 3 rounds of butties - rest of thighs, oysters and rest of bits from carcass, whizzed in food processor with mayo or soft butter and a pinch of mace. If you use butter you can put this in a bowl, set it in the fridge and serve it as a meal, sliced with salad and jacket spuds.

    The dog gets most of the skin and the parson's nose (bone removed)

    Then the carcass goes for stock.

    I wanted to add a post to this thread:

    I get two meals plus stock out of a small chicken. We pretty much just eat the breasts, then I pick all the meat off and use it the next night in fajitas or pasties or something like that.

    Anyway, last night I roasted a chicken and I undercooked it a tiny bit. But, it actually worked out really well that way. We only ate the breasts, anyway, and those weren't as dry as they would have been if I'd gotten every last bit of pink out of the joints of the bird. Then, when I was picking over the carcass to glean the rest of the meat, I found lots of pinkish flesh down in the joints and back. But, I realized that this was a good thing... after all, I'm going to cook it again, anyway! If anything, the slightly underdone meat is better for reheating than meat that is already fully cooked.

    We did a roast chicken on Monday and got the following out of it:

    Monday - a roast chicken breast each with tea
    Tuesday - a sweet chilli chicken pizza (plus another which went in the freezer)
    Wednesday - chicken broth (boiled up carcass & stripped every last bit of meat off)
    Thursday - chicken curry using meat pulled off on Tuesday when I was making the pizzas.

    Who knows, we might have the other pizza tomorrow in which case the chicken has fed us for a whole working week!

    I don't think 5 meals is bad from a chicken which only cost us £2.50 :D

    need some ideas, I am starting last 3 months of Maternity Leave today (so my pay drops considerably) so am hoping to make use of everything we have sensibly.

    Anyhow we have had a lovely New Years day roast today and I am needing some help with using up leftovers.
    I have a good amount of roast chicken left (if was flavoured with lemon and garlic btw) I would usually do a sweet and sour for me (DH doesn't like S&S) with leftovers in freezer.We don't eat curry I went of it whilst preggers and haven't got the taste back.
    So ideas for that.

    I also have some left over cooked carrot batons and 5 roast potatoes - any ideas? If need be I can purree the carrots for baby and freeze in portions.

    I have for the first time ever, made stock from chicken bones and veg peelings and looks and smells ok. So what can I make with that now.

    I am really loathe to throw any of it away if it can be used in order to make some lunches for me whilst at home or go toward a nice dinner for dh, dd(4yrs), me and even whizzed up for ds(6 months) if poss.

    This morning I've purchased a whole rather nice looking free range chicken. I intend to roast it either tomorrow or Sunday. I need some advice from other OS-ers on the best way to get the most out of it. I want to try to use everything up, legs, carcass (to make soup ?), brown meat. Usually the kids & DH are picky & only want the breast meat, so I want to try to get as much value as I can from the remains.

    Roast chicken the first day, then pick every last little scrap of meat you can off it and make:

    Risotto
    Curry
    Sandwiches
    Casserole
    Pies

    Practically anything you can think of containing chicken, and only once you've stripped the carcass bare do you boil it up for stock or soup (you'd be amazed at how much EXTRA meat comes off the carcass when you've boiled it up).

    From one small - medium chicken for 2 people I usually get: a roast dinner, 2 sweet chilli chicken pizzas, a batch of curry and a big pan of chicken broth.

    Hello,

    I am french so sorry by advance on my english.

    On sunday i often make a whole chicken. At the end (we are a family of 5 so there is not so much left but still) i cut all the rest of the meat in small pieces and with flour and a bit of butter i make a bechamel. If i have some i add grated cheese and mushroom and i put the prepation on a pastry in the oven. It makes a delicious tart, served with salad, you have your meal. For the carcass, i put it with lots of water carrots, ognions and potatoes for 1 or 2 hours in a sauce pan. I wait until it get cold and i take out all the grease that come on the soup (in the bin). I trown the carcass and i use the vegetable for the soup (mixed). I also put a lot of water so i can use some of the water as "bouillon" for pasta. It gives a very nice taste to the pasta and therefore you don't need to add tomato sauce on it but just cheese.

    Thanks Cazzdevil. I know this is a silly question but how do I make soup out of the carcass ? I take it I boil it up with some water & then strain it ? Advice appreciated !

    yes, some vegetable peelings, carrot tops, onion skins , bottom of the celery.. all those things you throw away.(yes, all if clean!) bayleaf and peppercorn. Parsley stalks are good. When I was at catering college we were taught to leave out salt, as we didn't know what the resulting stock would be used for.

    Don't use farinaceous stuff like potatoes, parsnips. P
