I try to buy 2.4kg or larger and then...
First day is microwaved 'roast'(legs and shoulders plus a slice of breast each)
second day chicken stew(1 breast chopped and any gibletty looking bits,stock from yesterday and potatoes ,carrots,green veg and dumplings,sometimes barley)
third day chicken and pineapple pizza from other breast shredded)
fourth day chicken curry or chicken risotto or chicken and pasta with remaining meat.
Carcass is frozen till I have 4 then boiled up for soup.
We dont have huge amounts of meat at any meal so day one is probably the most in one sitting.
If I do chicken pie,I usually only get 3 days out of one.
We freeze it in 4portion amounts so it isn't constant chicken for a week.0 -
Chicken Rice Soup:
2 onions chopped
2 carrots chopped
2 stalks celery, chopped
1 leek, chopped
2 cloves garlic,grated
1 bay leaf
4 oz shredded chicken meat
chicken stock
Dash pepper
3 oz rice
Saute off the veg in a little oil. Add in the chicken meat and enough stock to cover + 1". Bring to the boil, add in the rice and simmer until the rice is cooked. I haven't put salt in the recipe as it depends on how salty the stock is. Add it to taste if needed.
Variations: Can change the rice for 1 potato, cubed, or 3 oz pasta, cooked - cook it first or you won't have any liquid left in the pan! Can add chilies, or tabsco if you want it spicy, add in fresh herbs like parsley or dill or chives. If you dont' have a veg, add in a different one. Recipes aren't set in stone!

Okay, I can get a small chicken for £1.50 which I think is a bargain but my question is .. what's the best way to make it last regarding meals/sandwiches for a few days. I'm cooking for moi' and know how to throw it into an oven; it's the flexible spreading it without it going off bit that I need help with.0

First day is roast chicken
then leftovers that you can slice quite nicely get puts into lunch sandwiches.
Any meat left that you would look too wonky in bread gets put into chicken pie/chicken stirfry/chicken curry
Bones and whatever bits left on ribs etc that are too fussy to removed gets made into stock.
Final meal is chicken noodle soup from stock.
Oh, if you get giblets and things in them but don't fancy eating them (all offal are nice sliced thinly then flash fried in ginger and white wine) stick it in the stock.0 -
I agree with the above, but I think that if you can stretch to buy a better, more expensive chicken, you will get a lot more from it. Better, nicer, tastier meat, better stock that you can thin out more with water so it goes further still etc.
I'd rather eat one really nice chicken once a month than a cheap one every week, and if you do make curries, soups etc. with it then it can go a really long way.0 -

Yes, I found out and glad you did, what a laugh I've had here !:rotfl: Especially 'trying-very-trying's thread about sniffing the chicken for the first day; had me in creases did that !
Anyway, basically this is what concerns me [and bear in mind, I'm a Bloke so try and make allowances] is i.e.
Day One = you roast the Chicken
Day Two= sandwiches
Day Three= A stir fry
So does day three not mean you are re-heating the Chicken [or what's left of it] ? Is it okay to do this ?0 -

We always buy chicken fillets which work out expensive so im interested in how many meals for 2 people you could make out of 1 roast chicken?

I am nowhere as good a cook as the posters on here but I do get a good free range chicken, I know its dearer but I could not believe the difference in taste.
I do a roast dinner, then the next day, make a curry, and also do sandwiches for lunch.A cloudy day is no match for a sunny disposition~ William Arthur Ward ~0
