There are 4 of us and 1 large chicken gives
1 meal roast chicken
1 meal of either curry/fajitas/supreme/chicken/veg noodles
2 meals of chicken/leek pie (also use the stock in this)
So we average about 4 meals for 4 people0 -

Out of one large chicken:
Roast dinner for four plus five little dinners for a greedy six month old
Chicken curry for four
Chicken and vegetable soup for up to 8 - thats using the carcass and the other little bits.
The soup though, it has lots of added vegetables, and sometimes I add lentils too.

for our family of 4, 1 large chicken makes the following
roast whole then
the breasts are enough meat to make 2 curries, or if shredded makes a huge pile of meat, suitable for salads or sarnies. its suprising how large a pile of shredded chicken breast looks, compared to when its whole and sitting on your plate. mind over matter works, if its looks a big pile of chicken, people think they have got more than they really have, so feel full up. if i gave OH 1/4 of a chicken breast for his tea he would still feel hungry, but if i shred it, he gets fooled into thinking hes been given lots lol
the brown meat when mixed with leaks and veg, can fill at least two pies
the legs and wings, we eat as roast on the first night
then boil up the carcass and use to make large pan of soup/stew. how watered down you want to use the stock, will obviously decree the amount of pans of soup/stew you can get from it - i usually make two pressure cooker size pans of soup/stew from one carcass
so on average, i try to aim for 7-8 meals from one chicken
the best way to make a chicken last for lots of meals, is to not give people free access to the whole roasted chicken in the first place. if i put the whole carved chicken on the table, then my family would demolish it. if i only give them chance to eat the legs/wings and a bit of brown meat, then they fill up on veg and yorkies instead

Oh god I feel so naughty now......
I used to (will no longer) roast a chicken use the breast for a roast dinner for 2ad 2ch would usually then leave the rest sitting out on the side and after eating woud tidy up the kitchen.... throwing away the remaining chicken:eek:

Not sure if this is useful to anyone. I have been planning on trying to learn how to bone my chook to freeze in more manageable portions. I think this should work better for me as I live on my own. I am just concerned that because I only use small amounts of the chicken that I dont get caught up in heating / reheating meals. This way I will feel much more confident for example freezing stock and then freezing whatever I make with it if I need to as it cuts out one of the cooking steps (i.e the cooking the whole bird step)

This is going to sound really stupid
When you people say "boil the carcuss", what do you mean? Put it in a saucepan with water and boil it? I don't have a saucepan big enough and my largest saucepan is pretty big (or do you break the carcuss up into smaller bits to make it fit?)

it amazes me that thats what i would have done a year ago, only i would have put the remains in the fridge and picked at it until it needed throwing :eek:
it now does at least 2 meals for 4 of us plus soup- prior planning prevents poor performance!

no-one will laugh at you here, (well not unless you dance naked and paint yourself green)
until i got a stock pot i would just 'shove' the carcass in the bigest pan i had, mashing it down a bit actually helps release the flavour from the bones- prior planning prevents poor performance!

Mmm, this thread is making me hungry! I would love the recipe for any tried and tested chicken pies - I like the sound of trolls chicken and mushroom and kumekumes potato topped.
I pretty much do the same as most of you with my chicken - buy the biggest I can, then dinner that day and the rest goes into curries etc for the freezer. I don't usually make soup because it is always thin and watery. Any suggestions would be great.
