i am by no means an expert but the last time i roasted a chicken i followed jamie olivers tip of cutting the skin away from the breast and stuffing butter mixed with herbs between the skin and breast and letting it rest before carving. I couldn't carve it cos it just fell away from the bone. mmm i'm getting hungry now!

Ok - its roast chicken tonight fro tea
- ment to do it yesterday but didnt have time once id sorted out all my forms etc.
Anyway i used one of my tescos vouchers i had put aside for Xmas - £3 and my chicken was a tesco value one and it cost me £2.69 so i brought bramley apples to make a pud with. My little chicken only has to feed 3 of us - me bf and 2 1/2 year old - who isnt really a meat eater so technically only 2 people!!
Anyway that will be roasted tonight, then ill strip the carcass down, make my stock tomorrow morning, and fingers crossed make soup tomorrow night if i can last that long adn take that to work tomorrow night - have a hankering for soup now and trying to hold off not making it yet! (got swede, carrots and onion - not to mention 2 veg packs in the firgde to use!)
hopefully ill have enough to make a chicken pie with or ill add it to some pasta sauce (have tinned toms in the cupboard and what ever veg left to serve!)
would love to have enough for chicken sandwiches - :drool: but for the amount i put in a sandwich i could have another 2 meals!Time to find me again0 -

I'm rather new to all this OS stuff so please be gentle...
Have just done my first 'rubber' chicken - On Sunday I roasted a chicken (not sure of weight but cost about a fiver from local butcher)
So out of one chicken we got the following meals (for 2 people)
Sun - Roast Chicken
Mon - Chicken Curry
Tue - Chicken and Mushroom pie
Tonight - Sweet and Sour Chicken
Is this good or could I have stretched it even more?? Luckily we both really like chicken so don't mind having it every night.
I know I could have used the bones for stock and will try to do that next time.0 -

i am off to the supermaket to to buy a chicken i am planning on doing the same. i normally buy a cooked from from the hot counters in morrisons. but i am going to cook one from scratch. and try and get as many meals as possible.
one question why is it called a rubber chicken?????Life should not be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways, chocolate in one hand, champagne in the other, body thoroughly used up, totally worn out and screaming ~ WOO HOO what a ride!0 -

I would say you did a brilliant job helen0103. Don't forget though that Chicken Curry, Chicken and Mushroom pie and Sweet and Sour Chicken all freeze so you don't have to eat it all in the one week0 -
