  • I need to make some chicken stock now, I have the carcass and the juices from my chicken today, have onion and a carrot, was thinking about putting some chopped celery - does that sound ok. Will have to save some more meat to add when making soup though.

    I will put it in the slow cooker in the morning so I can cook when all ingredients have been sliced up = but for how long on the low setting?

    When is the milk added to the soup?

    Theres money saving and theres being stingy.

    I buy a cooked chicken hot off the rottisery at my local butchers for £1.99, yes £1.99p. I scoff the lot in one sitting or maybe save enough for a sandwich if i'm not hungry !

    Inspiration needed please! I like chicken but I just want to make something completely different wih the leftover chicken this time. This was one fat momma, so theres plenty of meat left. I do not want curry, biryani, chicken pie, pasta bake.
    I have rice, pasta, potatoes, lots of herbs and spices, dd has picked some wild mushrooms for me but I am the only one who eats them :( also have leeks, broccoli, tomatoes, spinach, cabbage Hmmm... forgot the spinach. Maybe chicken saagwala but I have done that before so I don't really want it!

    Hi Sarah what about this ?
    It is an 18th century dish and can be used for turkey or any leftover roast game.

    Basically it is the dark meat from the bird taken off in largish chunks.You slash the pieces here and there and smear on a devilled marinade. The marinade in Jane Grigson's recipe (English Food) is 1 tbsp Dijon mustard,1 tbsp of mango/peach chutney, 1 tbsp Worcester sauce or anchovy essence, 1/4 tsp of cayenne, salt and 2 tbsp oil.You then grill the pieces of chicken under a high heat until brown and crusty. Keep them warm.

    To make the 'pulled' chicken you take all the white meat and pull it into long shreds following the grain of the meat. to make the sauce for the pulled meat you melt 7 oz of butter in a frying pan,and stir in 1/2 pint of cream. Let it boil for a few mins stirring all the time. Add the pulled meat and any bits of jelly from the bird. season with slt, pepper and lemon juice.

    To serve pile the pulled chicken in the centre of a serving dish and surround with the devilled chicken. Jane Grigson recommends serving it with bread or toast and no veg, instead a salad afterwards.

    I've been meaning to try this for ages but somehow keep forgetting about it.

    I always make a curry from the chicken the next day, the kids love it!

    I am bad at making stock and Mr Cod doesn't see soup as a meal but i do a roast for a meal, the cut up chicken bits and put in omlettes the next day, then sandwiches for 2 for 2 days, then sometimes a risotto if there is anything left.

    a sweet steamed pud? he likes it if it has barley and lumps of veg and meat in, like a stew, but my love for butternut squash and sweet potato soup pureed is not generally appreciated :(

    Yes, something treacly ;) Actually my OH likes soup as a main meal but, as you say it has to have alot of stuff in it :rolleyes:
