  • The Hopkinsons Roast Chicken recipe looks fabulous, I cant wait to try that. Roast chicken is my absolute favourite.

    Can anyone tell me what corn fed chicken (with the yellow skin) is like? I have read somewhere that it tastes lovely but I have never tried it. Is it free range too, or is organic chicken better?
  • My mum's bought the corn fed for me and you can taste the difference between it and normal "good" chicken - but I'm not sure it's much tastier than organic chicken, just yellower. The stock might be tastier (Mum doesn't make it)
    Pre O/S: what's a vitamin? Does it begin with the letter e?Now: I'm not eating any of that pre-made rubbish...

    It all depends on the farmer/producer and what they fed the bird. Some organic chickens taste wonderful, some are only a little tastier (but still better for you in that what they're raised on is much healthier for them and you).

    I buy some of my chickens from a farmer who rears chicken the old fashioned way. But because he hasn't paid for the soil association 'organic' stamp of approval he can't call them organic - but only 'free range', (so they are organic in all but name). But he sells all he can produce - at a reasonable price for him and us - we're all happy.

    Talk to the farmer, talk to your butcher, ring the local council and ask about food markets - tell them what you want. Build relationships with the producers, they need us.

    I hadnt seen this recipe for the slow cooker lasagne - great idea! do you cook the lasagne sheets first or is it ok with them dry? I am hungry thinking about it - once I've got my chicken curry sorted I am gonna give this a go if my tummy can handle the creamy soup (I am not supposed to have dairy at the moment)!

    I know rubber chicken is moneysaving, but after 20 years maybe you've earned a break!! However you cook it, it still has the same background taste and texture.

    Why not try a few months 'chuck' free.

    Try something new. Try some of the new meat, fish or veggie recipes.

    Though this might not be such a good idea if you've already got a freezer full of bargain chickens.

    I've tried the chicken in the slow cooker thing and it worked a treat
    But

    i think i may have left it in there too long (About 12hrs) as when i took it out (Or tried to) i ended up with loads of little bones in the chicken that took me about an hour to fish out :o

    Am i doing something wrong C_Q ??

    The meat should be falling off the bone so that is why you have to fish them out.

    DH complains if I make chicken in slow cooker and there are bones so I point out that he is an adult and I would not dream of doing that for children!;)

    the only thing is with my OH is that he will not go anywhere near anything with bones in it :wall: even chicken drumsticks make him gag :mad:

    Try cooking the chicken overnight in slow cooker - then in morning fishing out the bones before you make a finished dish.
    It is worth the fiddle because you get so much more meat for your money.

    couldn't resist adding my amazing thai curry recipe...the old style board always makes me hungry...teeheee

    Thai Green curry

    Two tins of Coconut Milk
    Lime , or two lime leaves
    Green Curry Paste
    Lemongrass (fresh is best, but dried will do)
    Aubergine
    Peppers
    Chicken or Tiger Prawns
    Bamboo Shoots
    1 tbsp honey

    easier than you might think!..
    fry the curry paste on low heat for a couple of minutes
    add the coconut milk and heat thoroughly
    throw in the veg, bamboo shoots and lemongrass
    add a big squeeze of lime or leaves,the honey, and a little sugar and salt to taste.
    add the chicken or prawns (or mushrooms if veggie)
    cook for around 5 minutes

    serve with rice and prawn crackers, but remember to remove the lime leaves before eating..bleurgh
