Had a stressful morning yesterday! Had to deliver a cake by 2pm, would have normally done it the day before but I have been ill & my baby girl was in hospital last weekend, just getting back on track!

Had to make a number cake 1 & 8 for an 18th, in chocolate, but the no 8 just kept cracking through the centre. I was using a new recipe, which was gorgeous, but the third cake went ok, although slightly delicate! But had a text and Facebook message to say how nice it was, so I'm happy!!

Think the recipe was from here, it's on Lindy Smith's blog (spelling??!!) it was really lovely & so moist! My five year old only likes chocolate cake & doesn't normally eat much, but even she keeps going back for more of the off cuts!!

Not doing very well with my cakes atm, argh! I tried a chocolate courgette cake, mum had loads from the allotment so thought I would have a go and found a recipe online. It was in the oven for an hour and still wasnt cooked, so i just took it out and gave up lol, it does actually taste really good, just a little under cooked! I will have another go at it sometime, I also want to try making beetroot choc cake, the beetroot stains it such a nice colour!
I made beetroot chocolate cake last week! It was delicious, and as you say, a gorgeous colour.
I did think mine was a little dry round the edges but maybe topping it with icing or butter icing instead of just icing sugar will cure that... I'm sure there'll be plenty more beetroots to get it perfect :-)

It's a great book....I've made the caramel cupcakes twice and also made the red velvet ones, and I've made the lemon cupcakes out of the other Hummingbird Book.

You can get a pot of buttermilk for about 60p in Asda or Tesco
