Just saw a fab thing on a cake makers facebook page for those of you that have those giant cupcake mould's, they used them to make a chocolate shell which they fill with sweet's, chocolates, cake bites or even toy's. Just thought it was a good idea. It's the Scarlet Baker if you are on FB have a peek at their photo's to get an idea.

You can use any clear alcohol such as vodka or gin! it melts the sugar just enough to make things stick but evapourates quickly so you don't get any stickiness on the surface. Whatever you do, don't use water, it doesn't evapourate well and just stays sticky and can ruin the finish.
If you're sticking something fairly big on then your best bet is a small blob of royal icing.0 -
Gillyx thanks for that recipe, I will give it a try and let you know how it goes on.
Today I have treated myself to the Hummingbird bakery cookbook and bought a Wilton 1M nozzle on eBay so I can do these christening cupcakes.

Hi I also use elmlea on my ffresh fruit cakes and am planning to try adding the vanilla AD but couldnt see any in sainsburys today. does asda sell it and also, what does the cream of tartare do?
Hi,
I tend to stick to tesco as it’s closest to me and it’s actually their own range called tesco vanilla delight so Asda may have their own version in the same section that you’d find angel delight. The cream of tartar helps it keep its stiffness but if you don’t have any it would be worth trying it without any to see how it turns out. I always have it in the cupboard so always add it in. My oh had a birthday party last week so i decided to give alcohol cupcakes a whirl - originally i was lookin for all sorts of different receipes but having a 2 year old running round it didnt leave me much time so i decided to try and improvise myself. They turned out really really well - everyone ate them and i was worried about not having enough or too much but everyone said they were really nice and you could taste the alcohol - but it wasnt too much to make them unedible. Anyway here they are:-
These were cocunut rum / malibu cupcakes
vanilla cake with malibu buttercream
These were archers / peach schnapps cupcakes
peach schapps buttercream with vanilla cake
These were jager (jagermeister??) cupcakes - these were everyones favourite
Chocolate chip cupcakes with jager buttercream
Baileys cupcakes
These were coffee and walnut cupcakes with baileys and coffee buttercream
(my gran loved these and nicked a few to take to her friends)
This is all my alcohol cupcakes on the stand.
i did make a few plain vanilla and chocolate cakes as well for those who didnt like the idea but they were the last to go!!
Also my pic is in our local paper today from the charity event i did a few weeks ago - unfortunately it isnt advertising my cakes (as i not actually a business) but i was still chuffed that i was in there - its something to keep if i start up as a business.0 -
As my grandaughter likes carrot cake...I was thinking about doing her a carrot cake, giant cupcake for her birthday. I have ordered the wilton grass nozzle to decorate the top and also bought tiny sugarpaste carrots to decorate it with......just wondering will I be able to colour the cream cheese frosting green to make it look like grass ?0

The alcohol will evaporate, so there won't be any trace of it when the times comes to eat the cake0
