chocolate hazelnut cupcakes are divine from the hummingbird book. Cherydee was the buttermilk expensive for the Red Velvet cakes?

I seem to think it was 75p, but I'll check when at Morrisons tomorrow. I thought they looked awful when making them (red velvet)...but was pleasantly surprised how nice they were.

I'll have to try and make the hazelnut and chocolate cupcakes as we always have nutella in the house as grandkids love it on toast !

The hazelnut parline muffins in the newest hummingbird book are the best thing I have ever tasted!!! They were soooo light, you have to leave them to cool in the tin a good while o r they break open when you try to pick them up!

I don't know why but I had expected buttermilk to be much more expensive

    Hello everyone

I am a long time lurker on this thread, love baking and have done a cake decorating course recently.

I have offered to make some cupcakes for my friend's baby's christening in a couple of weeks time and wondered whether anybody had any suggestions on decorating them.

I have had a look on google images and there are lots there. I was also wondering what sized nozzle you use for piping buttercream onto the top of cupcakes? I guess it needs to be a fairly large one. Which looks best in your opinion?

    Thanks

Hey pinkpuppy it's great to have you on board

The Wilton 1M nozzle is great for the professional look on cupcakes.
Baby themes are really popular and a google image search should give you some fab ideas. What were you thinking of doing?

Not really sure yet - something pink??!! Will have to get my thinking cap on.

Also meant to ask - does anyone have a good muffin recipe? I want them to look all big and inviting like they do when you buy them in starbucks or somewhere. Mine never turn out like that :(

Hmm I'm not very good at muffins. Mine never rise up as much as they do in the shops.
  • Hi prob a very simple question but what is the best thing to use as "glue"? i am in the process of making a blue iced cake and want to stick icing ducks to it to make it look like a pond but dont want to see whatever is being used as glue any suggestions?

Hi! I use edible glue, available on-line or I get it from my local cake supplies shop. You can also use raw egg white, but I'm not a fan of this, I prefer the edible glue.

I use Nigella's double chocolate muffin recipe and they rise really well. It's this one...

    Ingredients
    250g plain flour
    2 teaspoons baking powder
1/2 teaspoon bicarbonate soda (baking soda)
    2 tablespoons best quality cocoa
    175g caster sugar
150g chocolate chips (plus more for sprinkling later)
    250ml milk
    90ml vegetable oil
    1 large egg
    1 teaspoon real vanilla extract

It makes 12, mix the dry ingredients together in a bowl and all the liquid ingredients into a measuring jug then just mix both together, the mixture is really quite runny. Add extra chocolate chips on top of the mixture once in cases and cook at 200 for 20 minutes.
