    And breathe littlebit:) I can't help with the egg problem but think if it's behaving normally in the oven it's gonna be fab. I always use sugar syrup with madeira never had it go soggy fingers crossed. I just brush it on with a pastry brush, on top of a cupcake or straight on the sliced layer before the jam and buttercream. Only good feedback up to now. I've not been doing it for very long either just about 18months.

    Awesome I think that is the same nozzle as usual for piping large roses or swirls Wilton 1M, have a little practise. Got to agree the results are very impressive:)

    im trying to, the small ones came out fine the mix tastes ok the large one is domed but as it will be a penguin i think it will add tp the shape lol it sounds hollow when tapped so i just gave it 5 more mins and im pulling it out, it seemed to brown quickly so i covered it with parchment to slow it down it looks golden but not burnt :D

    1st time decorating a cake this weekend and just wondering do I need regal icing or ready icing?? Just looking online at tesco and see the 2. Also They sell sugar dough in box of different colours, do I need that for figures? Is it icing I need to use for lettering and the swirls etc that you do is it just buttercream? Sorry for all the questions as just normally buttercream my cakes but my son would like a rainbow cake decorated. Thank you.

    excellent cakes everyone, as usual!!

    I use a 1M nozzle for the rose piping effect awesome.

    Nettles, regal icing, ready to roll, sugardough are in effect the same thing, they sell different types so you can get the colours you need. I used to buy coloured regal ice, but ive just started colouring my own ready to roll with gel colours, much more economical I think, but for just starting out, I would buy the ready coloured stuff. The lettering is made with this as well. For swirling, buttercream is fine. You can buy ready made icing in Asda or Morrisons if you find this easier.

    Moosetastic, your buns are amazing looking. What did you use for the topping on your buns and for the colours? Where do you get the gels you mentioned? Thank you.

    the icing I used on the buns above are from Morrisons, their own make. On the buns Ive used the chocolate one, the lemon one and the blue is the buttercream one made blue with gel colouring. The buttercream one is new and is practically white so any colour you add stays true. The icing on the giant cupcake is the strawberry flavour, and they also do a vanilla one. They are on special offer for £1 a tub at the moment.

    they are really concentrated so you add tiny bits at a time with a cocktail stick to get the colour you want. the colours i use are sugarflair ones from Ebay.

    Ooh Moosetastic what can I say they all look so yummy:) I specially like the pink and black giant cupcake very tasteful. The flowers and bees are on a little piece of spaghetti it was a new trick glad you liked it the one with the bees on was my own birthday cake (made myself-sad but tasty).

    Littlebit how's it going? Tip next time u do a cake wrap some brown paper around the outside of your tin and tie with string (insulates so the sides of the cake don't burn while the middle gets chance to cook) and test it by sticking a skewer in the centre of the cake if it comes out dry it's done. It also helps to put a roasting tin in the bottom of your oven filled with water a recent tip I've acquired is to scoop right out the centre of the tin til it goes up the sides of the tin a little and makes a "doughnut" type hole in the middle works a treat. Mine often dome a little but I level the top by slicing the dome off and turning the cake upside down so you ice the level base of the bottom:) Hope you don't mind the "advise" x

    Lovely cakes everyone!

    I'm back from holiday now. Had a lovely time and it was nice to get away from cakes for a wee while!

    Got a chocolate malteser cake for the 25th, then 2 giant cupcakes (manchester city and JLS) and 12 JLS cupcakes for the 31st, a 3 tier wedding cake for the 4th August, a Giant cupcake like the one I did with the roses but different colour scheme for the 10th and a cake for my nephew on the 11th!

    Looking forward to getting stuck in again!
