    Just wondered if anyone here made a wedding cake and if so have you got any tips? I've been making cakes since February but nothing as big as that, and I've heard of disasters of collapsing cakes!

    jen, i havent made any wedding cakes yet but i went to a cake dec class, and my tutor said to always assemble tiered cakes on site, as otherwise they will collapse!

    if i was making my first wedding cake, i would keep it simple, with a huge bloom on top or something for effect..
    We got rid of the kids. The cat was allergic. ;)

    I've got to make my first 3 tier cake in a couple of weeks. im doing a 4", 6" and 8" in the shape of optimus prime! lol think it will be QUITE a challenge!! LOL :rotfl:

    I've made the cake that nat linked you to and it was really straightforward. The instructions kept me sane.

    This is another BBC Good Food one with really clear instructions. Shows a different way of stacking the 3 tiers.

    Becs, I admired these earlier and then forgot to mention them, sorry. Gorgeous macaroons. They're on my "to do" list. I have the makings of pistachio flavoured macaroons in the cupboard and just need to make time to try them out.

    Also love your cookie jars. They're so pretty as well as useful. Is the recipe available online?

    Yes I got the recipe for the cookie jars from "bakerella" you can print off cowboy or cowgirl labels.

    How do you flavour macaroons? I've been playing with them recently but have no idea how to change them from your plain and simple macaroon to a more exotic taste!

    I followed the recipes from Jo Wheatleys new book, the orange and hazelnut ones I put some hazelnuts in with the ground almonds and orange zest & juice in the chocolate filling. The pineapple & coconut ones I put dessicated coconut in with the almonds, coffee and walnut I put walnuts in with the almonds and a touch of camps coffee. The earl grey ones I just emptied 2 earl grey tea bags into the ground almonds.
