225g unsalted butter
225g light brown sugar
4 medium eggs,seperated
1 orange -juice and grated zest
175g wholemeal flour
2 tsp baking powder
pinch of salt
2 tsp ground cinnamon
1 tsp mixed spice
50g ground almonds
110g chopped walnuts
350g carrots (obviously grated lol)
That'll do an 8 inch cake.
With the eggs,seperate then beat the yolks into the ,already creamed,butter and sugar before adding the orange zest.Add the rest of the dry ingredients.Whisk the egg whites until stiff then fold into the mixture,then add your carrots.
Hollow the mixture in the centre of the tin a little then chuck in the oven for 75-90 minutes at 180
Never tried sugar pasting one!

Wow finally read all the posts and there are some great cakes on here and lots of useful information. I love making cakes and love doing craft fairs. At the moment its just a hobby but would love to make it a full time job.
Was going to put up some images but cant find out how to shrink images down have shrunk them in Photobucket but still coming up to large so as soon as I can work out how to do it will put some up.
