Wow ladies your cakes look amazing - wookeyhole1. Makeyourmummyproud and Bindiboo :-) You really are a talented bunch :-)

Where are you Nat? I'm missing you:( Hope you finished the bees ok. Maybe you are recovering from Martins birthday celebrations!

I bought a Wilton 1M from my local supplier to try. Hopefully I'll get a chance this weekend. I did bake last weekend a few basic recipes which I've not tried before but very tasty:-) brownies ( a recipe somebody on here recommended I think but sorry can't remember who- hubby loves them) and a lemon iced tray bake which I'm happily munching my way through and my usual cherry scones DH can't get enough of them- bless him a very willing guinea pig!

I've had a wedding cake order for July and made them a sample mini cake today so they could see roughly what the actual cake will look like. Thankfully they were delighted :-)
I must look at a photo sharing site see if it'll let me post a picture yet although it still says "you may not post attachments" as I'm a newbie:(
Bit worried about showing them to you anyhow yours always look so professional.

    225g unsalted butter
    225g light brown sugar
    4 medium eggs,seperated
1 orange -juice and grated zest
    175g wholemeal flour
    2 tsp baking powder
    pinch of salt
    2 tsp ground cinnamon
    1 tsp mixed spice
    50g ground almonds
    110g chopped walnuts
    350g carrots (obviously grated lol)

That'll do an 8 inch cake.

With the eggs, seperate then beat the yolks into the ,already creamed, butter and sugar before adding the orange zest.Add the rest of the dry ingredients.Whisk the egg whites until stiff then fold into the mixture, then add your carrots.

Hollow the mixture in the centre of the tin a little then chuck in the oven for 75-90 minutes at 180

    Never tried sugar pasting one!
