    This thread tends to be a bit more about celebration cakes. you might find its worthwhile posting on the 'oldstyle' forum.

    I personally freeze pretty much any cake. I've frozen cakes with buttercream on and its fine, might go slightly runny but fine for lunchboxes. Traybakes are good, brownies etc should be fine and cupcakes/muffins usually freeze well.

    Hi everyone!

    I've only just noticed this thread on here and since I'm known at work as 'the cupcake man' I thought I should probably post :D

    I mainly make cakes for charity bake sales at work, although the giant cupcake below was my first try at an 'occasion' cake and I have been asked to make some for people to give as Mother's Day gifts :)

    The latest line-up for work a couple of weeks ago. There's banoffee, coffee and walnut, lemon and nutella.

    And finally, my first attempt at an occasion cake. It was also covered in glitter and looked really pretty but the pics don't show that! It's jam on the inside of it too. I've been asked to make one of these for mother's day so I think I'll use roll-out icing for the bottom (any tips on covering this shape?!) and my new Wilton 2D nozzle to frost the top :)

    Those cakes look fab Kevin, I have a giant cupcake mould that I havent used yet but got some birthdays coming up. Re the bottom of the cake, I have seen people cover the bottom with chocolate by using the cupcake mould. Melt some chocolate, paint the inside of the mould, put in fridge to set, take it out to do another layer etc, put in fridge to set then peel off mould. You may have to shave a little off the cake to fit it inside. Hope that helps.

    Your cakes look amazing Kevin!

    I've got a giant cupcake to do tomorrow that I'm going to cover the bottom with sugarpaste. I'm going to treat the bottom as I would a normal cake - split it and fill it and the crumb coat and finally ice it. Then I'll cover the top in buttercream. The person I'm doing it for wanted done this way so we'll see how it goes!!! I'l post a pic when I've finished. I'm a bit scared because it's for a special occassion! Eek!

    Thanks ladies :) I like the chocolate idea, though I'd probably break it :S

    What's a 'crumb coat' ? And when you say sugarpaste do you mean the roll-out icing? I'm happy enough to cover a round cake but I'm just not sure how I will deal with the cupcake as the cake slopes from bottom to top so there will be too much icing at the bottom :S

    Crumb coat is when you put a thin layer of butter cream all over the cake. It keeps all the crumbs at bay and helps the sugarpaste stick to the cake. Yeah, sugarpaste is roll out icing. What do you mean about there being too much icing at the bottom? I've never iced the bottom of a giant cupcake before but figured it wouldn't be too different from covering any other shaped cake?

    How did you achieve the finish with the 2d? I've got a 2d and I'd love to try the top like you did it, it looks great.

    Just done this '1' cake this week. It's the first cake that somebody has 'ordered' from me. I was so nervous doing it but it turned out fine!

    I didn't use the 2D for that one above, I just used a knife to swirl it all over! I have a 2D on order so the next giant one I do I'd like to pipe it with roses all over and peaks to fill in the gaps. Not sure how it'll work but we'll see :D

    Thanks! I was a bit worried about covering a cake shaped like that but it was fine!

    The top looks great like that! I was going to try roses and filled in bits with my 2D. Never tried it before so fingers crossed I don't have to scrape it all off and start again!

    Looking forward to seeing the pics :) That's the good thing about icing though, if it all goes pear shaped you can just scrape it off and start again!
