I agree with nat, double icing sugar to butter. If my butter isn't soft I sometimes need to add appx 1 tablespoon of milk.

Does anyone have a decent buttercream recipe? Mine is never thick enough, and never pipes all that well. It normally comes out like this http://img.photobucket.com/albums/v68/loaded__gun/Cupcake1.jpg

i use half/half unsalted butter and trex and then double the icing sugar but i also add evarporated milk to it and then vanilla.

Thanks Bindiboo I've often heard about using trex but I'm a lurpakaholic and have never been brave enough to give it a go. Think I will this weekend and condensed milk what a great idea. Thank you. Will let you know how I get on:-)

I wondered if anyone can help me with portion guides? I can't seem to find a decent one online and hoped somebody cold point me in the right direction? I'm looking to find out how many portions you'd get from a cake. It's for a wedding cake and I'd hate to get the numbers wrong! Thanks x

I'd sit down and work out how much it's going to cost you to make them. Include all your ingredients, cake cases, cake boards, boxes etc then you can have a think about how much you want to add on for you time.
