Good morning everyone,
annem38: sorry it has taken me so long to reply re fish cakes. I really don't have a recipe as such just judge by eye. I add butter and milk to potatoes during mashing to make them nice and rich. You can add extra seasoning if you want and then I just flake up the tinned salmon and mix through with a little chopped fresh parsley. I think you could add a beaten egg to mixture if you wanted to but I don't bother. I then shape into patties and leave in fridge to set a little. Then I dip each pattie in beaten egg and then into breadcrumbs. Leave in fridge again for a little while then wrap and freeze. I defrost before cooking.
I like mine shallow fried. I think you could also make them in oven but it is quicker to shallow fry them. You can make quite a few from one tin of salmon and it is a good way to use up any leftover mash you might have.
Hope this helps.:)

Hi all,
Am having a cooking spree today, picked up 20 chicken breast, loads of potatoes and leeks this morning and spent £25 - £50 left to last till then end of the month!!!!!!
Have made what feels like a thousand meatballs, ( prob about 60 really) some for tonight, 2 batches for freezer, have a huge vat of tomato sauce bubbling away, and leek and potato soup in the slow cooker - have loads of leeks left over, now sliced (i love my magimix).
I,m defrosting a whole chicken and a small gammon joint for dinner tomorrow, the leftovers will be made into a chicken, ham and leek gratan and a ham and chicken pie.
Also defosting a bag of mixed summer fruits I have found loitering, will make a fruit flan with that.
Whilst ovens on will make flapjacks, twinks and quiche.
Get me LOL........
Hope your all well xNote to self - STOP SPENDING MONEY !!

Been grocery shopping and once I got going I decided to do a big stock up shop and spend a bit more than I'd planned (I'm trying to stick to £30 a week for me and the dog) - after vouchers etc it came to £42, so not overly extreme.
I now have plenty of veggie stuff (I don't eat meat) in the freezer to last at least 3 weeks and a nicely full storecupboard as well as lots of nice fresh stuff including fruit and veg. I've written a meal plan for this week using up the fresh things first so minimising waste and trying to keep it varied and healthy. I lost about a stone and a half on Slimming World recently and am happyish with my weight now and want to keep it that way.
I think that next week all I'll need to buy is some fruit and veg and milk (oh, and dog food!) so the spend should be £15 or so balancing out this weeks stock up. Famous last words!0 -
just been my grocery shop used mr T coupon for £5 off £40 and put a couple of bits through separately for my mum before I did my shop and got a tillspit fo £9 off a £60 spend well chuffed :j
So my shopping at mr T's cost me £57.03, I also spent £3.76 at Mr L's and had a spend of £1.87 at shop yday
Shopping budget left is £89.75 I think I might be able to do this!!!!0 -
well this is week 3 of my 4 week month and again seem to have gone mad , shopped everyday in everywhere from mr t's to waitro$e, li*l, coop, local shops, amazon (cat food), milkman and that place where every thing costs a quid! so am now declaring £64.95 for the week which gives me a running total of £170.89 so have less than 30 quid for the week, should be do-able as long as i keep myself out of the darn shops
right must haul myself into the kitchen as for some insane reason (second bottle of pinot rose:beer:) i promised oh tapas for tea, so need to do patato bravas, chicken pesto, gambas de queso (delia recipe from waitro$e) to go with the meatballs and with mealballs and chorizo in mojo sauce i bought, wouldn't normally buy them but they were on offer and i really really wanted the eathernware dishes they come in!
highland fling thanks for the recipe :T, will be giving it a go during the week, have already got the pots and salmon, just couldn't find the nice easy recipe i had to make them!
have a good weekend everyone
