Evening all - have only just finished work and it is quarter to one!! I had meetings all day and then had to come home and write up all the minutes and make amends - on the way home tonight I nipped into Costco and bought some stuffed mushrooms - they are lovely - big portobello mushrooms stuffed with cream cheese and leeks and topped with panko crumbs and herbs. You get 4 in a pack for £4 so DD and I had one each and will have the other ones tomorrow.
DD has finally admitted that there are some kids at school who are being really nasty to her - she is overweight and they call her "Peter Griffin" - apparantly he's a big fat person in Family Guy. Plus they make vomiting noises when she walks past and spit in her drink in the dinner hall etc. I have told the school she is to come home for lunch from now on and I had a good talk to her about healthy eating and trying to get her weight off. She agreed to try so we'll see how it goes.
Will have the mushrooms from Costco tomorrow night and as I am at work all day I will buy lunch in the cafe in the offices we are using. It is a veggie restaurant - really hippy style but they have lovely stuff like butternut squash soup and bean stews etc. The offices are mad - they are newly designed and it is really off the wall - each office is a garden shed and all the sheds are next to each other in a big old warehouse - totally bonkers!
Well had better get to bed - I didn't have dinner until after 9 so am still full!

Morning all.
Need to buy milk today, so won't be a NSD. Going into town so will pick up my egg salad sandwich. Don't know about tea. May have some lo lentil stew with a jacket spud. Ds is off swimming with my Dad tonight so staying at theirs. Won't see him til after tea time tomorrow.
Thinking of taking him to gym lessons, but it's £40 for 8 weeks, and not sure I can afford it. It's also on Sat morn, and I enjoy taking him to the cinema to kids club then. Feel as if I'm going to lose important me and him time iykwim. But also feel like he'd love to go to the gym. Will try it out and see what he thinks after the 8 weeks I think.
Aww Jane. Sounds like she's having an awful time at school. But at least you know what's up now, so you can tackle it. Hope the school are being supportive.

Days veggie day on track and I think hubby is having egg and beans on toast for breakfast. Just toast or cheese on toast for myself soon.
Main meal sorted, Quorn sausages for hubby and Linda Mc ones for me.
NSD planned as nothing needed. Nothing needed tomorrow either, but taking Brother out so see what happens then.

Turkey steaks out of freezer for DH I made a cheese sauce to go over them.
I had HM lentil burgers with calcannon.
I am going to be even better at this NSD as our holiday to Ireland in on in late June and I need every penny for the trip:-):-)Weight loss challenge 66lb to go /59lb's lost

Mincemeat Cupcakes
12 oz Mincemeat(make sure veggie mincemeat if buying any for veggie week)
8oz currants
2 eggs
5oz castor sugar
5oz soft butter or margarine
8oz SR flour
METHOD
1.Combine all ingredients in large bowl and beat well for 5 minutes.
2.Divide mixture between cupcases(which are in bun trays)
3.bake in preheated oven at 140C fan oven/Gas mark 3/160C for 30 minutes until golden brown and springy to touch
A great way to use up mincemeat I make my own and have jars of it in pantry.
