Morning all, yesterday i slow cooked a joint of lamb - then DH says oh I'm not having roast again (he claims he doesn't like roast dinner, refuses to eat it and then I catch him scoffing the extras later on) so, I quickly cut the spuds into wedges put a bit of mexican seasoning on them when they were cooked, covered in two half eaten jars of salsa and topped with grated cheese, served with roasted lamb and a chopped salad OMG what a lovely dinner...4 very empty plates
Just trying to figure out my mealplan for the week...chilli/jacket spuds, Gino's pasta and meatballs/spag feature as these are in fridge and need using up and then guess what...I shall be eating out of the freezer....and you know what that means LYNSEY...GSPOTS!!!0 -
Morning all... Just a quickie before I scoot off for the school run!
Been paid... wooohooo!!! Feel as if I should go out and SPEND! lol. Only really need some yogurts for ds pack up, and a bit of fruit.
Tea today is going to be slow cooked lentil stew with cheesy bread. Dinner will be a soup of some sort. Ds is having pack up.
Never heard of magic lemon pudding.

Sorry for all the quips yesterday. I'll adjust my medication today and sort myself out.

Toasted hot cross buns (again) and stir fry for main meal. Just veg stir fry for myself, hubby will have Linda Mc prawns with his.
I don't think "veggie" week will clear as much freezer space as planned, though I have nut cutlets or something to get rid of. Some Quorn pieces (chicken style?) to get rid of in hubby's curry tomorrow.
I'll have to try hard next week on the meat and fish stash and get back on track with the freezers.

I am failing miserably to eat out of the freezer to reduce the quantity
I am one step forward and three steps back.
There are times when I just can't not get the too good to miss offer and then my most frustrating part is when I take one small thing out I put something larger back in when the food is cooked.
On Saturday I took out some cubed beef, did it in the slow cooker with a load of veg and some double concentrated tomato puree that needed to be used. The dish was really yummy and I was left with a fair sized amount of the vegetables and the sauce, far too much to throw away especially as it was so tasty and can be added to another dish. So being frugal I put it into a pot and then had to find the space in the freezer as this was larger than the meat I took out.
I have a large 6' freezer and a small freezer, and they are both busting at the seams, I did managed to get the small one empty just before Christmas and then spotted bargain turkeys both fresh and frozen after Christmas, I cut up the fresh ones into all sorts of sizes/portions from a whole breast to diced, mice etc.
The frozen ones remained whole and have been used since for several dishes (trying hard not to put any back in once cooked _ almost managed the other day and one one large portion of curry went back in), but it does not seem to matter what I take out I still seem to have no space.
So as I said at the start I am failing miserably with eating from the freezer to make any kind of dent to itEverything has its beauty but not everyone sees it.0 -
Day one of veggie over and done with, just six more to go.!!

Tea probably beans on toast - uck, but at least I have it in and that's one less tin in the cupboard.

I think we all suffer from this syndrome. I certainly do. I am now planning my meals around the meat/fish in the freezers. The idea is to buy nothing you already have, even if it is on special offer. There are so many deals about these days that by the time you have a space there will be a bargain. I now just buy fresh fruit and veg, plus bits and pieces. My housekeeping has dropped from over £100 a week (there's just two of us) to about £20 and that includes three dogs. The only time I put meat in the freezer is if it comes free.
There will be space eventually, the more you are frugal and stretch things the cheaper living becomes.

Not a Frugal issue I am very good at getting the bargains and making them go a long way, but the freezer never empties as I put more back in from made meals than I did taking food out.
Being Frugal (living without waste, prudently saving, not passing up a too good to miss offer that is not always going to be there next time).
And also as there is so much in there I never know exactly what I have, had a pleasant surprise the other day and found 5 huge pieces of Haddock (and I mean huge). I then remembered that is was being sold off (suitable to freezer) in Salisbury's sometime towards the back of last year and I went to buy 4 pieces and it was ridiculously cheap so I got the last piece as well.
I did a piece of it on Friday wrapped in Parma Ham (freezer) and made some Tarragon butter to go with it, delicious especially as I forgot I had it.
Not sure if my poor freezer had had breathing space in the last 18 months (certainly know I DO NOT Need Tortillas for the foreseeable future). And really must make a dent in daughters wedding cake which she kindly gave us the whole top tier and only hubby eats it.
There are only the two of us and I changed my eating habits almost a year ago and lost 4 stone on the Weight Watchers plan (thought I ate small portions until I started this plan) so not only do I eat differently I eat far less and even doubling up my portion sizes for hubby the freezer does not go down, plus I seem to be eating a lot more none meat dishes now (not intentionally but just happens with certain dishes).
What I need to do is empty the small freezer, donate it to daughter as a spare/extra and then some of my freezer excess to go with it.Everything has its beauty but not everyone sees it.0 -
I took 1/2 seedy loaf out of freezer, so toast for brekkie and tuna mayo sarnies for lunch.
2 chicken breasts from freezer, will stuff with garlic philly, wrap in bacon (oops, sorry veggie weekers) and roast, will have that with new pots needing using up from fridge and mixed veg from freezer.
Dont think anything else is likely to come out of the freezer today.....:(
OH and I did eat up LO HM chicken, mushroom and rice one-pot portions yesterday, that would have ended up in the freezer, so that was a success of sorts0 -
Morning all, I'm Knackered been up since.8 no.cooking for me today, going.to have beans on toast in a bit, going to take the last 2 duchy.scones from the freezer, rice for dinner took some veg.stock.out of the freezer, will be using that tomorrow. I want to make some coleslaw at some point.Lose 28lb 3/28lb
