Sunday first veggie main meal may be tagliatelle in a blue cheese sauce with mushrooms and possibly leeks (if cheap) or sliced red onions.

Veggie Challenge Week & Aldi Super 6 recipe:
Beetroot Roulade
This roulade is simple to make, yet will create a stunning impression.
SERVES 6
225g / 8oz fresh beetroot, cooked and peeled (Aldi Super 6)
2.5ml / 1/2 tsp ground cumin
25g / 1oz / 2 tbsp butter
10ml / 2 tsp grated onion
4 eggs, separated
salt and ground black pepper
for the filling:
150ml / 1/4 pint / 2/3 cup creme fraiche or double cream
10ml / 2 tsp white wine vinegar
good pinch dry mustard powder
5ml /1 tsp sugar
45ml / 3 tbsp fresh parsley, chopped
30ml / 2 tbsp fresh dill, chopped
45ml / 3 tbsp horseradish relish
1. Line and grease a swiss roll tin. Preheat the oven to 190C/375F/Gas 5.
2. Roughly chop the beetroot then blend to a puree in a food processor and beat in the cumin, butter, onion, egg yolks and seasoning. Turn the beetroot puree into a large bowl.
3. In another bowl that is spotlessly clean, whisk the egg whites until they form soft peaks. Fold them into the beetroot mixture carefully.
4. Spoon the mixture into the swiss roll tin, level and bake for about 15 minutes until just firm to touch.
5. Have ready a clean tea towel laid over a wire rack. Turn the beetroot out onto the towel, and remove the paper carefully in strips.
6 Beat the creme fraiche or cream until lightly stiff, then fold in the remaining ingredients. Spread this mixture onto the beetroot. Roll up the roulade in the towel and allow it to cool.

Had usual breakfast and last of the free biscuits for elevenses. Lunch was beans on toast and a satsuma. Afternoon break - HM muffin with a cuppa.
Dinner tonight - HM suet pie, roast potatoes, roast parsnip, cabbage, carrots and gravy.

Evening all. Well the specialist has agreed to ds having a hearing aid. They think he's probably been a bit deaf from birth.

Yesterday and today I have had a cookfest. We got 1kg of lean mince, a big bag of reduced fish pie mix, a pack of small prawns and a pack of scallops (both reduced) from the freezer and I made....
Two huge veggie packed cottage pies using up loads of things from the fridge;
Two huge lasagnes with loads of veg and also green lentils;
Two huge fish pies with leeks, carrots and peas using a creamy mushroom sauce (50p from morries been in cupboard for donkeys).
Each pie will feed all five of us with potential leftovers too so got some cracking meals now. I topped the cottage and fish pies with homemade mash using sweet and normal potatoes sprinkled with a bit of cheese (from the tesco £1 double pack glitch last year - yeah!).
Just need to portion up and freeze what we don't immediately need. Two portions of lasagne and one cottage pie went to the kids last night and we both had lasagne too. Two of the kids have picked lasagne again tonight and one is not hungry (he is poorly today with a temp). We may have the fish pie with asparagus as have two packs waiting to be used in the fridge (reduced - naturally!).
I love cookfests!
I did run out of veg making it yesterday so had to shop and got LOADS reduced in the produce area last night. Came out with BAGS of shopping including four plants and only paid £4.30! Wayhey!!! Then had to top up the bits I refused to pay full price for at Tesco and went to Aldi today. Got everything I need again now. :T
We definitely cut down in Jan as the CC bill was way lower than normal. Massive reduction in fuel costs too as hubby has been at home due to redeployment so has not needed to spend £10 a day on diesel. Our CC bill was about £250 below normal AND it has TWO holidays on it and the full year's line rental for our new broadband / phone package. :beer:3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

Like katskorner:wave:I've been having an on-and-off cookfest over the last couple of days. Already made a batch of mushrom soup (found a recipe that didn't use cream/creme fraiche/milk, so about 160 calories/serving), enough for four or five portions. Total cost about £3.20:j.
Planning to make another batch of soup - carrot and ginger this time, to make best use of the Aldi Super 6 veg:j:j. So it'll be dirt-cheap - probably around £0.50 in total:j:j:j.

Done 3.5 miles walking today and stuck to exactly what I said i would have yay me.
I have taken some bread out of the freezer for lunch, need to decide what to have for tomorrow's dinner, will also visiy Mr w see what whoopsies are about.Lose 28lb 3/28lb
