    Morning all. Had poached egg on toast this morning for brekkie. Think I've had my quota of eggs for this week. Ds won't be happy if I steal them all!

    Ds is going to hospital today to see the ENT specialist. Hopefully they'll agree to him having a hearing aid put in soon.

    Have virtually nothing in my purse, or bank, once the end of the month bills leave it, so reallyyyyy skint. :(

    Dinner is maccy d's. Tea, a fish thing. lol

    There's a storm coming, Mr Johnson. You and your friends better batten down the hatches, because when it hits, you're all gonna wonder how you ever thought you could live so large and leave so little for the rest of us.

  • Veggie Week Challenge + Aldi Super 6 recipe:
    Couscous-stuffed Cabbage

    A whole stuffed cabbage makes a wonderful main dish, especially for a Sunday lunch. It can be made ahead and steamed when required. Cut into wedges and serve accompanied by a fresh tomato or cheese sauce or even a vegetarian gravy.

    Serves 4

    1 medium size cabbage (Aldi Super 6)
    115g/4oz/1 cup couscous grains
    1 onion, chopped
    1 small red pepper, chopped
    2 garlic cloves, crushed
    30 ml/2 tbsp olive oil
    5 ml/1tsp ground coriander
    2.5 ml / 1/2 tsp ground cumin
    good pinch ground cinnamon
    115g/4oz/1 cup green lentils, soaked
    600ml/1 pint / 2 1/2 cups stock
    30ml/2 tbsp tomato puree
    salt and ground black pepper
    30ml/2 tbsp fresh parsley, chopped
    30ml/2 tbsp pine nuts or flaked almonds
    75g/3 oz mature Cheddar cheese, grated
    1 egg, beaten

    1. Cut the top quarter off the cabbage and remove any loose outer leaves. Using a small sharp knife, cut out as much of the middle as you can. Reserve a few larger leaves for later.
    2. Blanch the cabbage in a pan of boiling water for 5 minutes, then drain it well, upside down.
    3. Steam the couscous according to the instructions on the pack, ensuring they are light and fluffy.
    4. Lightly fry the onion, pepper and garlic in the oil for 5 minutes until soft then stir in the spices and cook for a further 2 minutes.
    5. Add the lentils and pour in the stock and tomato puree. Bring to the boil, season and simmer for 25 minutes until the lentils are cooked.
    6. Mix in the couscous, parsley, nuts or almonds, cheese and egg. Check the seasoning again. Open up the cabbage and spoon in the stuffing.
    7. Blanch the leftover outer cabbage leaves and place these over the top of the stuffing, then wrap the whole thing in a sheet of buttered foil.
    8. Place in a steamer over simmering water and cook for about 45 minutes. Remove from the foil and serve cut into wedges.

    Variation: you could substitute healthy brown rice for the couscous.

    From Edwardia:- zafiro1984 you eat pistachios...if you have a Lidl might be worth having a look as my local one had huge polybag on Friday and you could buy pistachios by weight.
    I don't have a Lidi anywhere near me - its 18miles away so by the time I've factored in the diesal, there's not much to put between that and ordering online and I'v found Mr A is the cheapest (he's 10 miles away but at least delivers)

    DH is still ill and not eating much, it's been 6days now and he's lost 9lbs - at least he's cheap to keep at the moment :rotfl:

    Edwardia:- you mentioned you once had Diabetes symptoms - I feel I'm heading that way but my Blood Sugar is normal - you mentioned having difficulty with low carb and the veggie week. What don't you eat as a general rule.

    Went to Docs again yesterday, lost another 1kg, that's 5 kgs in 2wks.

    Had a satsuma for brekkie, having the last bap with ham, lettuce and mayo for lunch, leftovers for dinner, decided to set a £10 budget for veggie week, should be plenty.

  • Veggie Challenge Week & Aldi Super 6 recipe:
    All-Day Veggie Breakfast Irish Colcannon


    This lovely warming winter's dish is a breakfast-inspired variation on the traditional Irish colcannon, and bears a slight resemblance to eggs florentine. Here, baked eggs nestle among creamy potatoes with cabbage and bacon, and a topping of grated cheese.

    Serves 4

    1kg/2lb potatoes, cut in even pieces
    225g/8oz cabbage, shredded (Aldi Super 6)
    4 rashers veggie bacon
    2 spring onions, chopped
    butter or margarine, to taste
    fresh nutmeg, grated salt and ground black pepper
    4 large eggs
    75g/3oz mature cheese, grated

    1. Cook the potatoes until just tender, then drain and mash well.
    2. Cook the cabbage until just tender but still crisp.
    3. Cook the veggie bacon according to the packet instructions, and cut into small pieces.
    4. Preheat the oven to 190C/375F/Gas 5.
    5. Drain the greens and mix them into the potato with the onions, butter or margarine and nutmeg. Season to taste.
    6. Spoon the mixture into a shallow ovenproof dish and make four hollows in the mixture. Crack an egg into each and season well.
    7. Cook for about 12 minutes or until the eggs are just set, then serve sprinkled with the cheese.

    Options:
    - try kale instead of cabbage
    - veggie hotdogs would work instead of veggie bacon
    - add 2-3 flat mushrooms, grilled and sliced, into the mix for even more of a breakfast theme

  • That recipe is very similar to one I use I make Irish calcannon and add the eggs as above but dont use the veggie bacon.

    zafiro1984.. the classic symptoms of type 2 diabetes are thirst, increased urination, fatigue, sudden weight loss and can also include things like blurred vision, insomnia, and feeling unwell after eating.

    I've had diabetes since 2007 but eating low carb since 2010 stabilises it for me.

    I don't eat and drink (takes deep breath):

    Bread, biscuits, cake, pastry and other baked goods.
    Puddings, fruit yogurts, desserts, ice cream (except ice cream in small amount very occasionally)
    Porridge, breakfast cereals, granola, muesli
    Pizza, takeaways, ready meals, Pot Noodles
    Pasta, rice, noodles,
    Potatoes
    Lentils, split peas, chick peas, quinoa, polenta, spelt, couscous, semolina and other grains
    Baked beans, cannellini beans, butter beans, haricot beans, kidney beans etc
    Any fruit which spikes my blood glucose (for me that means only eating small amounts strawberries, banana, pears, cherries, melon)
    Dried fruit
    Fizzy drinks, squashes, cordials, lemonade
    Beer, white wine (could drink red wine and spirits but don't)

    That leaves vegetables, fish, seafood, meat, poultry, game, some fruit, water, tea, coffee., milk, cheese, non fruit yogurt, creme fraiche, cream and other dairy. I have just found organic toddler snacks without added sugar and additives which are only 10g carbs per packet :) And yes I can eat 90% cocoa chocolate.. 14g carbs the whole 100g bar :D

    Off for my walk with my mother
    Breakfast is at cafe so poached egg and beans on toast.

    Fruit for mid after noon

    Dinner will be veg soup have a huge pan I made yesterday.
    Thank you Welsh Poppy - have been out for a long walk on a local farm today and the fresh air has definitely left me feeling a bit brighter and hopefully blown away a few unwanted cobwebs lol
