If i do the veggie week, I'm planning on having things like, egg and spinach fried rice, macaroni cheese, cheese chilli and sweetcorn muffins, cheese on toast, vegetable stir fry, veggie pasta bake,.seasoned beans,tomato or veg soups and rolls, cheese wraps erm dunno what else yet, will prob steal receipes from you guys.
For lunch I had yesterday's dinner lol, will have a cup a soup and a roll for dinner.Lose 28lb 3/28lb

Freezing!!!! But looking forward to a snowy weekend if the forecast comes tru. Suppose those of you who already have it won't want it though!
Today we are having meatballs done in a HM veggie sauce, baked and served with pasta.. mmmm. Uses up loads of meatballs from the freezer. But space still a premium even though I am not shopping much!
Fancy a curry later in the week so will need to cook as no HM portions left. That will use chicken up but give us portions to freeze. We have three portions of chilli to freeze left over from the other night. That was lush - nice and hot!
Had soup for lunch - can't beat a hot bowl of tomato soup on a day like this.
Fighting the urge to go to the shops this evening as OH is getting a bit under my feet now he is home all the time and I am feeling the need to escape - too cold to go running unless I end up completely mad later!
NSD but will need milk in a day or two.3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

I am totally up for veggie week! Boring freezing day today! Went to my new ward to get my shifts for job and spent the rest of the day with Santander who requested a PHOTO OF MY GRADUATION as proof that I am no longer a student. To say I have a headache about it all is an understatement. Looking a different bank accounts as we speak.
Went into Waitrose to buy cakes for my new ward (only supermarket on the way -- promise!) and loads of stuff was reduced. Got peppers, raspberries, apples, orange juice, cereal, 8 cakes, 2 pieces of salmon... all for £7. Very good.
So good, I shared a fillet of the salmon with my kittens!Now I am employed, lets get rid of this student debt!0 -

If you don't have the time to watch though I'll just say that saturated fat is not the problem it was believed to be 40 yrs ago and that my GP and consultant are quite happy for me to chomp through eggs eggs and more eggs cheese butter etc.
I wouldn't cut out any food group but what about cholesterol though? it's still current advice in the UK that saturated fats are still responsible for pushing that up in non genetic cases??

Kitty_Ears, could get Cravendale I guess in advance as has extra long date for a no spend week? I'd miss my bananas on a no spend week as I only buy two at a time as anymore ripen too quick, I'd probably buy different fruit for that week that would last longer.
I had a small emergency fruit and veg spend in M&S today, just to keep me going till I get to Waitrose later in the week. So another £6.01 spend, need to total up year spend so far (lol Lip_Stick yes a bit OCD on spreadsheets though I swear when working I only usually update once at end of monthat the moment I'm more shuffling around my lack of money :rotfl: )
Actually spent more on bird food today than my own food which I probably shouldn't do but after watching Winterwatch I feel guilty that so many birds die in this freezing weather!0 -
Just catching up with the posts, I'm easy on the challenge and it looks like the veggie week is favourite, but there is no way my DH will join in, he's what you call a meat and two veg man -or very old fashioned, oh, and yes old.
Breakfast - fruit as usual
Lunch - spinach 250gms, plus pistachios
tea - sprouts, carrots, and a topping which usually goes on a pizza based on sweet onions, toms, olives, peppers and anchioves - 30 gms 85% dark choc -
just looking at the above - its all veggie, well nearly.
DH - no breakfast, lunch: egg on toast, HM biscuits, tea: sprouts, carrots, chicken done in a mushroom sauce, pots done likewise, bacon rolls - HM profiteroles and toffee sauce.
I thought I was finally getting a bit of space in freezer no 1, unfortunately no, as I had to use up 4ltrs of milk before it went off. Made rice pudding by the slow cooker full and froze it in individual portions. Also made loads and loads of scones all frozen. I suppose the upside is that I didn't throw the milk away.0 -
Hmmm been thinking about potential veggie week. Mine would look something like this: Lunches: veg soup, veg stew, ryvita with herby philly and salad, roasted veg couscous, egg/beans on toast. Evenings, risotto, veg lasange, veg cottage pie, mixed bean cass, egg grilled mushrooms and tom, and home made (healthy) chips, beans and cheese on toast. Kirri - more cholesterol is made in our own body than that which we get from food. Yes some people do have an inherited tendency to high cholesterol and for them then they have to be very careful yes. My cholesterol is monitored every three months more or less and since going low carb it's excellent.

I couldn't do without my tea fix. I usually buy my milk in bulk and freeze it.
I doubt I'm at the top of the charts with the spending today. I spent £9.44 jn Costco on eggs, peppers, apples and cucumbers. I then swapped 6 eggs with my Mum for some mushrooms.
I've also bought some chocolate soya milk for DS. I don't like him having it too often, but Im really struggling with his weight.
I have now spent £32.33. That so much better than I usually do, I'm cuffed.0 -
