Veggies your challenge is to come up with recipes to handle Confirmed Meat Eaters, Fussy Kids, Low Carber and Non Almond Eater
and obviously to keep in with a budget as such ie no unusual ingredients that would incur extra spends..
this is hard! Presuming avoidance of fake meat, had quick flick through my file of saved recipes and there's a lot of pasta, rice, pulses.. then it goes onto flan case made with nuts and almonds or a broccoli and cheese gratin with almond topping or a nutty stilton cauli cheese with almonds :rotfl:

For me and Him it has to be organic, no soil mould Quorn or probably GM soya, definitely no almonds and no pasta, rice - and any pulse more than 10g carbs per 100g for my portion. OH lurves his organic bread. Nuts and seeds are fine, got Stilton in the freezer (loads of cheeses actually) got a bowlful of nuts getting dusty. We don't do lettuce cos rocket, spinach and watercress much more nutritious. I don't do pastry either, I buy Higgidy quiches (are they veggie ?)
Eggs.. I buy 2 x 6 large organic free range @ 2.39 each per week
Milk.. 2 x 2 LTR semi skimmed unhomogenised organic Guernsey per week @ 1.92
That leaves 91.38 for
2 breakfasts for OH (but thankfully organic Weetabix is veggie so max 2.79 if he runs out)
As as long as I have mushrooms that's my breakfasts sorted for 7 days.
5 light lunches for me (usually salad)
5 packed lunches for OH (max sub budget £10 can include tinned organic as has kitchen at work)
2 weekend lunches
7 dinners.
No snacks for me, any snacks (organic cake, cookies, biscuits) for OH in his £10 but optional
No puddings, but maybe some Green & Black's organic chocolate ice cream if on offer.
Fruit (bananas usually) for OH in his £10
No alcohol. Tea and coffee stashed.
Other than pastry can do anything you throw at us
Ocado, Abel & Cole, Sainsbury's, Waitrose
Doable ????????

Morning all, no extra snow of any significance, but freezing!! I think we're in the coldest part of the country at the moment and those on higher ground must be suffering.
Still waiting to see when MIL is due back, but getting into the centre of Newcastle should be fine.
NSD achieved easily yesterday and caught up with house-work - nice and shiny. lol

Seriously though again, I only really use pork mince for spag bol or to make a simple meat-loaf. I do have some "whoopsied" pork mince in the freezer to use up and only buy @ 69p per pack max, but usually 49p.
A few food issues?? Tesco always seem to attract issues. lol
Challenges:
I could manage the veggie one easily, salads, stir fries, pastas ect. I would just need to organise a little and prepare.
I think I'd manage a veggie week a lot easier than some will with the planned "eat meat only for a week".
I think I could also do a "No Spend" week, just freeze some bread and milk beforehand and make sure I had enough fruit and veg. But before I commit to that, could someone tell me how long a week is??
Coffee time (cheap stuff Edwardia), need to give hubby a nudge and get himself out of bed!!

I'll have to check the carb content of what I eat to see if it's low in carb. I doubt I'll be able to follow much of what you'll be eating as it sounds like it's going to be cheese rich and soya cheese is awful. I'm really struggling make nice cheese sauces. Kirri you may be able to help me there. You seem to be more au fait with vegan than I am Yet!
I looked at the chestnut puree recipes, but lots of them were not veggie or had milk in them. I'll have to experiment! Or eat it straight from the jar!

I fancy a NSW a no spend week, after all, this is a living out of the cupboards and freezer thread so would sit comfortably into the spirit of the thread.
I would find it interesting to see how creative folk would have to be using up anything unusual and maybe, just maybe, there would be a little more space in the freezer at the end of said week.0 -

Lynsey - I may well have some horsemeat in my freezer as I have loads of stuff from all of the "affected" supermarkets.
Every now and then I go veggie - I really like veggie food, but I agree about the "fake" meat - ugh! The only thing I don't mind is vege mince. My favourite vegetarian cookbook is "The Enchanted Brocolli Forest" by Mollie Katzen. It was written in the 80's and contains recipes from the Moosewood Collective restaurant in Syracuse New York. The stuff is very "hippie" but there's no fake meat in sight and some of the stuff is lovely. The Enchanted Brocolli Forest of the title is a casserole of rice and nuts and stuff with the florets of brocolli standing up like trees sprinkled with white cheese for snow!! Alot of the recipes are vegan too.
Am just off to Tesco so will treat myself to a Costa coffee in there for my breakfast. I am taking back some meat which was really fatty so will hopefully get a refund.
I need to get rice, water chestnuts and tea bags and I will have a look to see if there is any good offers on too.
Lunch will be bacon (cooked yesterday) with tomatoes and a slice of wholemeal bread, and dinner tonight will be pork fried rice using up my minced pork.
When I got in from work last night DD had decided to bake cakes but she had put bicarbonate of soda in them instead of baking powder and they were vile and had to be thrown out. I was cross because she had wasted stuff! She had also made a huge bowl of strawberry buttercream which I now don't know what to do with - does anyone know if you can freeze it?
Lip_stick I smiled at the onesie for your son. My DD (aged 15) got one for Christmas and I think it is horrible!! She loves it though and would go out in it if I'd let her!
Well off to hurry her up (she's late AGAIN) and then off to Tesco. It's freezing here today, but still no snow!Jane

Helicopter crash in vauxhall, used to get that route.to work, I used to see my Aunty take that route walking everyday and her building is next door,.she is o.k and says she got in just before the crash, thank god!
Lynsey glad you thought of this challenge thing, so far we have the stick to a budget week,.veggies week and no spend week, I think I can manage all 3since it was your idea, you choose the starting one.

Ok I'm i for eat veggie for a week, I was veggie for 4 years, then I got pregnant and ate my bf steak while we were out for dinner (he was in the loo, his FACE when he came back!!) Haha. That's how I knew! Anyway, I've got a lovely risotto I make which is carrot, mushrooms and blue cheese and various other yummy bits a pieces. Morning all, cold, cold, cold. Heard on the radio this morning the temp in Alford, Aberdeenshire was -12. something, it's cold here but not sure what it is all i can confirm it def - something.
Lynsey are you making him coffee in bed today. You're not kicking him out of bed to make your coffee are you, yeah you probably are as you probably "see" it as exercise lol.
Lip_stick and recovering spendaholic, my girls both have onesies aswell, they both like them. My youngest dd has worn hers outside several times, once she was just going to her friends for a minute to see if she was coming over here, ended up staying at friends house so i sent her sister over with clothes, she started moaning i don't need clothes i am dressed and when i come home i'm going bed. Then another time she went outside and started speaking to the neighbours in it, she has a minnie mouse one with the hood !!.
ms_night_ryder, yeah i agree Lynsey should choose.
Food today is breakfast toast, lunch soup again and dinner is stuffed chicken thighs, rice with peppers etc and probably salad.
