Hi Welsh Poppy - really easy to make, I just made one slab and then covered in chocolate, let it almost set and then cut it into cubes.

    Bounty Balls Recipe
    200g condensed milk
    100g desiccated coconut
    8oz icing sugar (approx)
    8oz chocolate
1.Mix the milk and coconut together.
2.Add enough icing sugar to form stiff dough which will form balls.
3.Form small balls and leave to set on a tray until all the mixture is used.
4.Place the tray into a fridge to set (over night is best).
5.Coat the ball in melted choc and leave to set.
    6.Setting time minimum 4hrs.

Alternative method: line a tray with greaseproof and spread the coconut mix into the tin leave until set (instead of rolling them out into balls). When set turn out and cut up into chunks. then cover with the chocolate.
    Or
line a tray with greaseproof and spread the coconut mix into the tin leave until set. When set pour over the melted chocolate and leave to set, then slice.

Went and done a veg run, I have noticed lately I have been really tired, put it down to lack of veg and see if u feel better.

Also my thighs and bum are killing from hill walk yesterday,, but on a good note, went to weigh myself, thinking if i have put on 3-4 lbs over the Christmas period I would be alright with it, I actually have lost 1lb yay, another walk tomorrow.

Will remaining jerk chicken with rice and veg, crossaints for lunch.

Well done Ms_Night_Ryder on weight loss and anyone else I missed cos you're posting so fast. :D

The stuff I got from yourhealthstore.co.uk arrived today and the salad fruit and veg wash has leaked over everything :(

I was frugal this week and bought OH some BNWT Marks and Spencer cotton shirts in Oxfam's sale for 2.39 each. He's a terror for going through the collars and cuffs on shirts.

Dinner tonight is pot au feu to use up lots of veg so just tinned org toms from larder.

Edited to add - got refund on the salad fruit and veg wash that leaked

    Hi all,

Had enough of casseroles last night so ended up getting out burgers and we had a lovely burger on ciabatta topped with a field mushroom and stilton cheese with salad. It was lush! The casserole is going to the boys tonight with a fresh jacket potato to tempt them - they seem happy with the idea!

Getting out chicken breast tomorrow to make a chinese with a black bean kit that has been in the garage sometime. The boys can probably have fishcakes. Crikey - this planning a whole day in advance is different! I usually like to pick on the fly but then we don't use things up so planning it is!

NSD today apart from newspaper. yay!
    3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

Gosh this thread is moving so fast it's hard to keep up.

Took a deep breath this am and listed what was in a freezer. Won't bore you with details but I think I have enough in there to last until the end of Feb. Hands got very cold and my writing got more and more scrawly the colder I became. Needless to say tonight's meal is entirely out of the freezer. One good thing about getting everything out of the dreawers is that I've no little peas rolling around in the bottom of said drawers.
