I'm eating out of the freezer and cupboards challenge

If you're in the area of Borough Market, I recommend the cafe at Southwark Cathedral right close by, which does great cake ! The market has it's own website www.boroughmarket.org.uk
OH is cooking tonight again, reprising his spaghetti bolognese but instead of all those carbs we serve it on a pile of sliced green beans. The diced Irish beef from Tesco came out of the freezer to defrost Thursday. OH will saute reduced price onions from Morrisons in Fillipo Berio Extra Virgin olive oil (offer from Morrisons) with garlic from Lidl, peppers from ASDA and value mushrooms from Tesco Express. Then he'll add the beef (Tesco special offer), a tin of chopped tomatoes and some sieved tomatoes (Lidl) dried Herbes de Provence and dried oregano (Lidl), fresh bay leaf (garden) and dried paprika (Lidl) and leave it to simmer.
Tomorrow morning we're going to Morrisons to get some fish and bargains.0 -
I've written the same post 3 times and keep losing it Gggrrrr :mad:0

Spent about £20 today, lots of reduced salad leaves, and fruit. Got some egg fried rice for dinner. Feel like I didn't get much in the way of food for OH will need to get nibbles in lidl tomorrow!Annual Grocery Budget £364.00/£1500

NSD, took a look in Sainsbury's and walked away - not really that many quality bargains!!
Very low on bread, probably try Morries tomorrow night. If no joy, I might bake some.
Sorting my freezers today I found two small portions of monkfish tails - reduced to 35p in Morries a while back. I was going to make "scampi" with them. Any other recommendations??
Found a packet of frozen puff pastry that needs using, must have been there for a while!!
Good luck if bargain hunting this weekend - hope you find nice cheap quality stuff.

OH bought tomatoes in Tesco Express for the bolognese sauce which tasted great. The Tesco Irish diced beef was too chewy and full of gristle - won't be stashing more of that in the freezer !0

Here's a recipe for roasted monkfish wrapped in pancetta, by Michelin-starred chef Tom Kitchin, from Caterer & Hotelkeeper. If you forget the shellfish mariniere he says to serve it with, it's a fairly simple recipe for two people but you can mess around with the quantities. Lidl should have pancetta, if not Lidl is the cheapest place I know for proper Parma ham. Pancetta is an Italian bacon so if the pancetta or Parma ham is too expensive, you could try smoked bacon. I'd suggest not using the olives if you use smoked bacon and maybe adding in some mushrooms around it when you roast - or shallots -Morrisons has them pretty cheap atm.

Might have enough monkfish to do one meal - the two portions must only be about 3" each - hence buying them originally to make "scampi".
What would they be like done in some sort of sauce??

It's a meaty sort of fish so it's more suited to strong flavours.
Has it still got skin on ? If so, when defrosted you need to take it off before you cook it - otherwise, the skin shrinks round the fish and makes it tough.0 -

No skin on, just two small pieces of tail.
Just had a look at a chinese ginger and soy sauce recipe.
Marinated and skewered seems like another option??
Another one was with king prawns in a tomato and wine sauce - got a bag of lovely king prawns.
Just need to get them used.
