I used the second of these, replacing the celery with a red pepper, doubled up the quantities, and cooked it longer in the slow cooker.

    :)

More jam and toast for breakfast.

Another toasted cheese and onion sarnie for lunch - used the rest of the mushrooms cooked in garlic and thyme picked yesterday to have with it. Nice but think I prefer a salad with it at lunchtime.

Dinner was just a load of griddled veg - feeling lazy - I just put beetroot, courgette, onion, pepper, cubed tofu (last portion) and potoato wedges in a tin in the oven with olive oil, salt, pepper and mint. Wasn't the most inspiring dinner cooked like that as flavours sort of merged but was ok.

Just taken another banana crumble out the oven..

    Out the freezer today:
    1 x banana
1 x crumble mix (finished one pot)
    1 x tofu portion

I'm running out of meal ingredients - got 8 x veg curry and 1 x stilton portion in the freezer (which I'll use tomorrow with pasta and french beans). Other than that it's just veg and pulses

I have a small food delivery due midweek - of the cruelty free/non destruct eggs/cheeses and some fruit. May have another small order at the end of the week for dried basic storecupboard ingredients as run out of a few things. May be passing a Waitrose this week too so may nip in for a few bits. Being strict with purchases/budget though.

Will make a cake when the orders arrive, probably the Mary Berry orange syrup cakes. Also planning a cheesecake the week after to use up some lemon juice, zest, curd, 2 open packs of biscuits over a year old and condensed milk half a year out of date. Really getting through the few last out of date ingredients now :D Can't wait to just buy things as I need them instead of making something to suit what needs using!

    In to freezer - nothing.
Out of freezer - 2 bits HM JJ's Cheesey Bread + HM Coconut/Cherry Scone + 2 Muffins + Pork Steaks.
For dinner we had roasted butternut squash/potato + sausage roll + roast beetroot/red/white onion/tomato.
