I'm eating out of the freezer and cupboards challenge

    Dinner tonight will be mushroom chasseur from freezer with rice from cupboard. The chasseur is made from a recipe from "Agirlcalledjack" website.

    Into freezer - Nothing
    Out of freezer - 2 portions mushroom chasseur

    Jelly, Do you have your pizza sauce recipe I made it and have used it but cant find it written in my sacred recipe book.I must have mislaid it.


    Slow Cooker Pizza Sauce
    (adapted from Not Your Mother's Slow Cooker Cookbook)

    24 oz Tomato Puree (I used 4 tubes of Mr T value tomato puree)
    16 oz Tomato/Pasta Sauce (not ketchup! Make your own tomato sauce, or I bought a jar of Mr T value pasta sauce)
    3 Cloves of Garlic, crushed
    2 tbsp Dried Oregano
    1 tbsp Dried Basil
    2 tbsp Dried Parsley
    1 tbsp Sugar, to your taste
    3 tbsp Extra Virgin Olive Oil
    1 anchovy fillet (leave out if veggie; I didn't bother with one)
    Water, as needed
    3 tbsp Parmesan or similar Italian hard cheese, grated
    Salt and Pepper, to your taste

    Put all the ingredients (except cheese) in the slow cooker, stir well, and add just enough water to smooth out the sauce.
    Cover and cook on Low for 7 to 10 hours, stirring every 30 minutes or so if you can, until thickened. Add extra water if the sauce starts to stick and become too thick too quickly, but stirring it so help avoid this, as you don't want to sauce too runny.
    Taste for sugar, adding more if necessary.
    You should aim for a deep, rich, brick-red colour, and a nice thick consistency.
    When the sauce is done, turn off the slow cooker, and then stir in the cheese.
    Season with salt and pepper.
    Let the sauce cool to room temperature before using.

    Makes enough to cover four or five large (14-inch) pizzas.

    Cost: about £2.20 in total, or 50p/serving


    (made another batch of this at the weekend - yummy! Also works as a pasta sauce, you only need a tablespoon per pasta serving.)

    I have some milk - gone off - phew!
    Also found from the garage stock - blame Mr F - he was in charge of stock rotation in there - tin of John West Red Salmon - 2008. This one is down to me - Feta - should have been used in July.

    for tea - Pea, Pear & Rocket Soup. I was intrigued by the ingredients:) Very tasty actually, and lovely bright green summery colour. Cost £2.25 in total, probably about 4 portions in total - the rest will go in the freezer when it's cooled down.

    Dinner was HM Salmon Quiche + HM wedges + Carrots/Onions.
    I made a batch of pastry - result - 3 quiches. I have some pastry left in the fridge.
    Plus I made JJ's Cheesy Herb Bread - had to use an old cake tin as baking trays all in use.

    OUT - Took some mince beef out and made 2 medium cottage pies plus two small ones for mum. We had one of the medium ones tonight and the other was put in freezer.
    IN - Had some yogurts that were BBF 3rd so yesterday they were frozen - some in ice lolly moulds and some in ice cube trays. One medium sized cottage pie.

    Breakfast - toast and jam

    Lunch - 3 cream crackers (finished the pack - they weren't bought for me but I've eaten them for convenience) and cheese

    Dinner - chocolate biscuits...

    Didn't bother taking photos (!) and feel ashamed at my food choices!!
    Too tired to cook today, had busy day so lack of time too, might snack on something else later..

    Nothing in/out of freezer.

    Can't wait for my fruit delivery tomorrow, hope it turns up as not had confirmation.

    In to freezer - HM Quiches + HM JJ's Herby Cheese Bread.
