    Hello there

Havent read the whole thread so not sure if you have these ideas already!

    1. Jacket potato with beans and cheese grated on top
    2. Omlette or boiled eggs with soldiers
    3. Value noodles with stir fry veg
    4. Potato and leek soup or curried parsnip soup or any kind really made with whoops veg
    5. Foraged fruit crumble - i know not really for this time of the year - but if you can forage for apples and blackberries - the crumble topping is going to be pence
    6. Some kind of sandwich with smart price bread a scraping of butter a pack of value crisps
    7. Dhal with rice
    8. A HM pizza shared between two.

A pasty, Cornish or otherwise. Home-made pastry is cheap to make and you can put almost anything in it. My last pasties were vegan, my next ones will be cheese and onion, and after that I'm trying sweet pasties with the leftover manky Christmas chocolates that no-one can be bothered to eat.

That's 'cos they're a summer veg. Substitute something local and seasonal- diced parsnips/carrots ? Economical cooking is all about making the best use of the ingredients that are cheap for you ;)

courgettes are really easy to grow - I am still working on my surplus from last year which I froze.

This thread is amazing, thank you so much for the great recipes!
One to make baked beans a bit more interesting: cook some sliced mushrooms and some bacon bits (i usually use the cheap cooking bacon from the market/butcher etc - i find smoked has most flavour so you don't need as much) in garlic with a drop of oil/butter to stop it sticking. When bacon and mushrooms are cooked add tin of beans and heat through. yummy. can also add barbeque sauce or brown sauce, or use chorizo instread of bacon, or leave the meat out completely. very cheap, very quick very tasty!
Will have a look for some more recipes and post later. In the mean time thank you all for all your ideas!

Sounds good but I don't buy bacon bits - I find it a lot cheaper to buy a packet of smart price streaky bacon and cut it up with a pair of scissors and it goes a long way.
I sprinkle cooked bits on baked potato and cheese, pasta, in stews and HM pizza

We love HM soups - They make a Hearty meal if served with sliced garlic bread or dumplings or best of all HM crusty bread

Parsnip and Apple, french onion, minestrone, chicken using leftovers from a joint
Mushrooom and Bacon and Tomato and courgette (I make this in the summer when I have plenty of both in the garden) sprinkled with cheese.
    Plate pies are a mainstay here too;

vegetable fritters served with rice and sweet chilli sauce

    Cheese and onion plate pie
    Cheese and Bacon plate pie
Roast Dinner plate pie (using all the leftovers from a roast including potatoes)
Corned beef and onion plate pie (half a tin corned beef, fried onions, and mash with an egg to bind)
    Tuna and sweetcorn plate pie
chilli plate pie (using leftover chilli)
vegetable and cheese sauce plate pie
You really can put anything in a plate pie cheap and filling

    Tuna or pilchard fishcakes
    Pilchard flan
Savoury pancakes (filled with whatever you have going topped with a white sauce and a sprinkle of cheese) bake in oven ttill cheese is bubbling.

savoury bread and butter pudding with leftover bread and leftover meat make a savoury custard with mustard added for a bit of zing.

If you use sausages slice them up and they go a long way.
Chicken thighs and drumsticks can be stripped of their meat and added to lots of things

Baked potatoes are cheap and filling with topping of choice.

I have lots more things that I do depending on what I have in x

poor man's scotch eggs - wrap boiled eggs in mash and dip in flour and eggs and fry.
    kidneys with rice or pasta

Great ideas Butterfly Brain. Just wanted to ask - do you put a pastry base and/or top on the plate pies?
    :D I haven't bogged off yet, and I ain't no babe :D

  • It is entirely up to you - I usually do a double crust (makes cleaning the plate easier)

    There are very few puddings in this post. So;
Good old fashioned rice pudding - and it takes me longer to type this than it does to make it!! And if you want to push the boat out throw in a can of evaporated milk.

I'm not much of a pudding person, but proper rice pudding - yummy.

Another favourite pudding that uses store cupboard ingredients (apart from perhaps the milk powder) is Gulab Jamun, which is best descibed as Indian version of a treacle pudding rolled up in small balls.

    See http://www.mamtaskitchen.com/recipe_display.php?id=10175 for a recipe / ingredients.

Personally I don't deep fry, buy shallow fry and keep the balls moving around the frying pan - seems to work just as well.

BTW you'll only need 2-3 balls per person, they are rather sweet but very nice!
