  • Something my mum has always done, Cheese and potato pie. even tho it isn'a a pie with pastry:rolleyes::confused:

    I boil up my potatoes and a couple of onions. (loads of seasoning) I use a pressure cooker to save £ :D when done drain and mash then pop in an oven proof dish and top with cheese and grill for 5 mins till cheese starts to go brown. serve with a tin of beans (or I love a tin of spaghetti:o) or works really well with Salad too. Mum always said that when we were scratching she would always have in potatoes and cheese. so that was a meal.:T
    I made this for my now hubby as we needed shopping in and he loves it! requests it at leeast once a week!:D
  • UPDATE - NEWS JUST IN!
    My mum has just done her shopping in ASDA and phone to tell me that the corned beef is now gone up a bit more - £1.17 a tin! In Lidl last nite, theirs was £1.18 where it used to be about equivalent to ASDA's 78p....what the heck is going on??????:eek:

    thankyou all very much for the brilliant recipes. my neice is going away to university this week and i have just spent the morning reading through this thread and printing off recipes that i think she will enjoy.
    will surely help her with her budgeting and establish frugal habits.
    It takes a long time to eat an elephant and I'm doing it a bite at a time!!!
  • My boyfriends veggi chilli recipe:
    1 packet of bolgonase flavour beanfeast 98p (not chilli con carne mix as this doesnt turn out as well)
    1 tin value chopped tomatoes 30p
    1 tin value beans 18p
    1 tin value kidney beans 11p

    Make up beanfeast as per instructions on pack in a large pan then add all the ingredients to the bean feast and simmer gently for 20 mins stirring occasionally. This will serve four and works out at 39p a serving, we usually eat it with bread. Optional extra is to add tabasco sauce, £1.23 a bottle maybe isnt that cheap but a bottle does last ages as a little goes a long way also add pepper to really bring the heat of the tabasco out if you like it spicy.

    Slightly off topic but when I was a student (many years ago) there was a book 'Grub on a Grant' which was good for a starter... Kilty Pie (mince with a savory crumble topping), pasta with sweetcorn, tuna and mushroom (I think) soup.. and the horrible fish with orange sauce! Don't have a copy here.. but from memory dealt with day to day meals, special occasions and cheap meals for the end of term when cash was short... all very easy to follow instructions and essential for any new student away from home.

    How about Vege Chilli - I learnt this at girl guide camp, because it was a one pot wonder and easy to do on the campfire.

    Tin Baked Beans 17p
    Tin Tomatoes 19p
    Tin Red Kidney Beans 15p
    Chilli powder to taste -5p?

    Bung all in a pot and heat. Add chilli to taste. As Mr Ramsay would say, DONE! ;)

    Serve with rice, value tortillas or just plain by itself. Also good with those veggies from the bottom of the fridge in, and even better with a fried onion starting it off.

  • My gran grew up one of 7 and they had the same food practically everyday. Porridge for breakfast, jam sandwich for lunch and lentil soup made with a ham bone and served with bread for dinner! That is a cheap days food and quite healthy!

    My mum makes a meal that is still to this day known as Selina Scott in their house (and now mine!) Serves 2 or 3 with bread and a smaller portion.

    Value pasta - 30p a bag?
    Tin value tomatoes - 20p a tin?
    Onion - 6p?
    Cheese - solid block mozzarella is best - 60p a block at Lidl?
    Herbs
    Clove garlic
    Salt & pepper

    Sweat down onions and garlic, add herbs/s&p/tin toms and simmer down until tomatoes are thicker. Chop mozzarella into cubes and stir into hot sauce until cheese is stringy. Boil pasta. Stir cooked pasta into tom/cheese sauce.

    Put into casserole dish and bake. Or to save electricity, just serve!

    (As far as I remember this is an adaptation of a recipe Selina Scott did on some Ready Steady Cook type TV programme in the early 90s - and the name has stuck!)


    I also make a cheap curry type dish:

    Tin chick peas (or equivalent from dried)
    Tin value tomatoes
    Tin spinach (this is a little pricier but good vitamin content)
    Teaspoons of cumin, coriander, chilli, turmeric, paprika - or just curry powder
    Onion, mushrooms, carrots
    Red lentils

    All just cooked down together, makes an absolutely huge panful and is delicious with rice :)
