  • Not a meal as such, but a recipe from my ('70s) youth that I've been craving for the last week or so... rice salad;

    * left over cold cooked rice
    * left over cooked peas/sweetcorn
    * a dollop of salad cream to bind it all together
  • I tried to make the bacon, onion and potato pie last night that was one of the early recipes on here.

    Just wondered how you stop the top layer of potato drying out and help it to cook? I added some stock to it after a while but then there was too much liquid in the bottom.

    My mum used to do something similar! She used to do potato salad too. left over mash boiled eggs and raw onion chopped veeeery small and added salad cream. tastes delish! but very moreish....:o

    Yup, I really miss Tesco Value Pesto 99p! Did about 8 meals from 1 jar. I'd add some grated cheese but I'm sooo wild and extravagant!

    Put some tin foil over it then remove it for the last 10 minutes or so of cooking so it can brown off.......

    Tonight I am going to have a sardine and tomato salad along with some chopped up peer thats in the fridge and thinly sliced celery. I have quite a bit of salady stuff thats got to be used up so I shall grate some cheese over the top and eat with some sliced brown bread and butter.Someone gave me about 10 tins of sardines so I'm using them up as the main bit with salad stuff around it.Tomorrow will probably be sardins on toast.I am trying to use up whats in the cupboards rather than go to the shops to buy more stuff in.
    Any more ideas for sardines will be welcome :D

    I've read up to page 6 and thought I'd add these two recipes to the thread and then go back to reading

    Chickpea curry (4 portions)

    Tin of chickpeas (~35p)
    Tin of kidney beans (~19p)
    Tin of chopped tomatoes (~31p)
    Onions (10p? I use a couple out of those big bags of cheap cooking onions)
    Bit of garlic
    Curry powder


    Fry the garlic for a few moments, add the onions and fry until nice and soft. Add the kidney beans, chickpeas and chopped tomatoes along with the curry powder. Give it a good stir, pop the lid on and simmer for 30 minutes. Check and stir every now and then, perhaps add a tiny bit of water if it's sticking. Serve with rice. Should make at least 4 portions.

    Occasionally I might add a splash of chilli sauce if I have any floating around.

    Another favourite in the house is:

    Baked liver
    and mash (3-4 portions)

    Pack of lamb's liver (~£1)
    Onions ( (10p? I use a couple out of those big bags of cheap cooking onions)
    Thyme (I have some in the garden)
    Splash of cheapo red wine (I usually ask friends and family if they have any bottles gathering dust they really don't like)
    Seasoned flour
    Oil

    Rub a splash of oil over the bottom of a baking dish. Slice and lay the onions all over the bottom of it. Season some flour with salt and pepper. Coat the liver with the flour and lay over the onions. Splash some of the cheap wine over and add the thyme. Bake for around 30 minutes, turning once or twice. Sometimes I cover it if it's cooking too quickly. This leaves the liver really soft and juicy.

    Serve it with mash or baked potatoes, and veg. Sometimes I cut up the potatoes small and add them into the dish and bake it all up at the same time, but you need quite a big dish to do it all in.

    Superb thread....we are by no means skint but equally trying to budget so we can have money for other things too!
    Loving so many of these recipes- happy to see how healthy some are too!
