    Just had a really yummy tea!

    End of the month so it's use up the fridge n freezer and I always have lots of veggies in being a veggie :D


    Aubergine and chestnut gratin
    1 large aubergine cut into cubes
    1 red pepper, chopped
    1 onions, sliced
    1 clove garlic, crushed
    Tin chopped tomatoes
    Squeeze tomato puree
    14 chestnuts (mine had been cooked and frozen) HEB
    1 sprig rosemary, finely chopped (I used oregano, basil and thyme coz that's what I had in!)
    1 tsp fresh lemon thyme (had none)
    4 sage leaves, finely chopped (had none)
    2 Healthy extra portions of cheese (recipe says parmesan but I used Cathedral City lighter)

    Method
    Fry the aubergine and pepper gently in frylight.
    In a seperate pan, fry the onion until it softens
    Add the garlic, tomato puree and tomatoes, and cook until some of the liquid has evaporated
    Add the chestnuts and herbs, the cooked aubergine and peppers, and season well
    Transfer to an ovenproof dish, sprinkle over the cheese and grill until browned
    Makes 2 good sized portions and is yummy! Used a HEB and HEA but well woth it, I had it with a few wedges and am now stuffed :D

    Evening all,

    I have been a bit off track recently not really sticking to plan or going to meetings much, had a supportive text today off my consultant to say she was a bit concerned I'd put 2lb on recently and was not losing like I use to and encouraging me to get to club today. I managed to whizz between meetings and got to WI - lost 0.5lb - not a lot but first loss in ages:j

    Have said I shall stay for image therapy next week and will try to get there more.

    Have been told to go and enjoy the festival I am going to this weekend - will mean a flexi weekend as its a vegan festival only on once a year and will involve wall to wall vegan food - not something I see out and about too much!

    Anyone any ideas how to plan a flexi weekend? I'm staying room only in a hotel and have a fridge and use of a kitchen so breakfast will be fine - rest of the day will be food and more food:eek: guess I will enjoy and get back to plan next week (not good timing as have my Dads birthday and a balti night out too)

    I will avoid fried food and burgers etc but wont be able to resist a slice of vegan cake - but will just have one Sat and one Sun, I wont bring food home, unless SW friendly. Know I will eat and drink loads but will get back on plan next week - I hope!

    A friend who is going is on SW so hope we can help each other out!

    Hi all, star week so my body has kindly expanded with water retention and I've put 1.5 lbs on...gah.

    Anyways onwards and upwards, still on plan and will need to compile a shopping list for the week ahead.

    Evening all

    Well done losers :p

    Green day for me:

    B - oats (HEB), FF yog
    L - big salad, potato salad (1.5syn for LF mayo), HB egg
    D - 2 x tortillas (12syns), HM SF veggie chilli, cheese (2 x HEA, and HEB), FF greek yog, cucumber
    Snacks - pear, noodles with soy sauce,
    Drinks - coffee, fruit teas, water, squash

    Total syns = 13.5

    Hello!!
    Another good green day for me. HAven't been out for a walk tonight, my legs told me that they needed a rest, so I've plonked myself on the sofa and am enjoying some peace and quiet while DS is round at a friends house!
    I'm desperately trying to take control of my budget as well as my belly so am really trying to eat cheaply at the moment. Hoping to plan a mega cheap week for next week, and then I'm off to Singapore, so who knows what will happen food wise (I can guess what will happen drink wise :o but really don't want to sabotage my efforts).
    So anyway, today was:
    oats, berries and yogurt (B)
    ryvita and banana (rest of the B)
    Milk in tea (A)
    pasta with chopped herbs and lemon juice
    satsumas
    apples
    a big fat 4 finger kitkat (11 syns)
    yogurt
    and dinner is delicious mince with rice.

    Brian's daugher: SW quiche is gorgeous isn't it? I couldn't believe it when I first tasted it !!:j

    Just wondered, do you syn the mince or is it quorn? Just nosy :rotfl:

    EVENING ALL: Just been to group and stayed the same - not so bad as I expected a small gain. I am going to go back to red and green days this week and see how that goes.

    On the matter of the veg when cooked down not being in proportion for EE. I asked our consultant and she knew NOTHING about it. She said same as us really that it would jigger up the cook books and everything so not to bother about it and she would tell us if she heard anything more.

    Bulgar wheat??? what to do with it?

    Evening all you losers :D
    Still on track even though am watching Two Greedy Italians [drooling over the food]
    B - weetabix hot water/milk [part a] coffee
    L - 2x wm rolls [2xb], lemon curd [3], toms, couscous quiche, pineapple, melon, activia, breakaway [5]
    T - LO cheesy pasta [2xa], 2x quorn sausage, roasted tomatoes, spaggy hoops, bbq sauce [1]
    Snacks - 2x apple, melon, pineapple, onken, tomato
    Syns - 9

    Having a bread free day tomorrow as not on lunch duty but will be again on Friday. Good job its half term next week, will need to detox the bread :rotfl:.

    It's quorn (or on this occasion, Asda's own brand meat free mince) which I make into a sort of bolognese sauce and then chuck in a can of baked beans and some frozen peas. It really is delicious, especially if you have it with cheesy mash :D
