I'm a bit of a lurker on here, I love reading everyones post and have found lots of useful ideas and tips, so thank you!
I'm wondering if anyone can give me a few ideas as to what I can do with half a pot of mascarpone cheese?
I've already done a savoury meal with half and would like to do something sweet. The only thing I can find is Tiramisu and thats a no-go as I don't like coffee!

I use it in tomato sauces for pasta. There's an earlier thread with lots of suggestions that should help so I've added your thread to it to keep the ideas together.

Why not try pannacotta.
A good recipe is from Aldo Zilli that I make at least once a month. I always use the full 250g tub though!

Easiest pudding ever,
Cut a banana in half lengthways. Spread a thick layer of marscapone over the cut side, sprinkle with demerarra and place under a hot grill until sugar has melted and begun to bubble. Delicious.
Wonderful with peaches in the summer too.

Hi, I hope this is the best thread to post in!
I was going to make a cake and use a recipe I found on Delia's website for a sponge with a mascarpone cream filling - where she combines 250g mascarpone, 200ml fromage frais, 1 tbsp caster sugar and 1tsp vanilla extract. I've bought the mascarpone and fromage frais but now decided to make a chocolate cake instead.
So now I'm wondering what would be best to use to make this into a chocolate mascarpone cream? I was thinking cocoa powder and then wondered if this would turn out a bit grainy, so maybe I should mix in some melted chocolate instead? Just noticed someone on this thread suggested mixing cocoa powder with mascarpone though so it might be ok?
Also does anyone think that icing sugar would be better than caster sugar? I thought it would be but the recipe definately says caster.0 -
With caster sugar in the mix, neither are going to be 100% smooth anyway, so no harm in using cocoa powder. It'll probably give it a speckled effect mind, whereas with melted chocolate you'll have more of a ganache. You could have fun trying both :P
I have to say my favourite *ever* dessert has to be mascarpone with a bucket of caster sugar mixed in and a sprinkling of cocoa powder on the top (strawberries optional :rotfl:). I could eat that all day long, the crunchy texture is quite something. Very naughty, and very simple.0
