I stir through a little icing sugar to mascarpone and use as a topping for fruit crumble instead of whipped cream. Traditionally used in an italian Tiramissu (sp?)

Mix half a tub of mascapone with 1 or 2 smoked mackrel filets for a delicious mackrel pate. Mash the mackrel with a fork, mix into the cheese and add salt and pepper to taste. Its really quick and easy to do, but tastes like youve been hard at work for hours!!!!

    Lime cheese cake.
    i packet of ginger biscuits,
    two tubs of mascapone cheese
    2 limes
    icing sugar
    butter

mix ginger biscuits with melted butter and make base for cheesecake.
mix the cheese with the juice of both limes and add icing sugar
grate one lime finely and add to cheese mixture
cover the ginger biscuit base with the cheese mix and smooth over the top with the back of a spoon.
add a little bit of grated lime rind to the top and maybe a bit of grated choc to garnish and place in teh fridge for at least one hour - longer if you can resist it.

eat and enjoy. it is very very yummy
  • 8 rashers of bacon cut into strips and fried then add...
Garlic and fry off a bit
    add 2 tins tomatoes (pureed/liquidized)
Plenty Pepper and then a cereal bowl of frozen peas
Just before serving add a pot of mascarpone and warm through.

Add to a packet of cooked pasta bows and serve with crusty fresh bread..mmmm
Not in debt at the moment, but been there in the past and realise I'm the kind of person who could easily fall back into it with the self destructing spending button so making sure I keep on top of being a good girl.

Hello - if you make up a tomato bolognaise sauce then add a couple of dollops of mascarpone, mix this into cooked penne, it's like the very posh sauce version you get in the supermarkets.
Also if you put some in a bowl, sprinkle over some soft brown sugar (not demarara tho' as it won't work) and leave covered with clingfilm in the fridge overnight, the sugar will melt into a toffee-like sauce. Lovely on museli or breakfast cereals!
Oh and on the pasta thing again, fry chopped up onion and bacon bits. Cook pasta, drain both, mix hot pasta in a bowl with the bacon, onion, a knob of butter and a bit of the mascarpone with salt and pepper to taste. Very rich, filling, quick and tasty!
Hope this helps - I'm now hungry so off to raid the fridge!

Very nice looking creme brulee recipe on Taste (Sky 3) earlier, with raspberries and mascarpone in the bottom. Can't find a recipe on their site, but perhaps someone else will know.
