I freeze it as is. My favourite pasta sauce is to roast some veg like peppers, courgette and aubergine, then get the stick blender out and mix the veg with some mascarpone, it's lovely!0

you cold do a tomato and marscapone pasta bake, just make a tomato sauce (pasatta or howvere you usually do it) and then add your marscapone to it with some veggies etc, then do your pasta bake as usual, YUM!Northern bird on the loose!

I'm not too sure about freezing it as I think it might seperate on thawing.
Anyway, a few things I do with it
A dollop in mashed potatoes, lovely flavour
Add a dollop at the end of risotto, makes it even creamier
virtually any pasta dish is improved with mascarpone
The only other things I can think of are sweet things like
topping for fruit salad
mixed with a bit on honey and top pancakes or sweet omelette
any cheesecake
And my favourite - drizzle a little Bailey's on some Pandoro or panettone and top with a dollop of mascarpone (extremely calorific)A friend is someone who overlooks your broken fence and admires the flowers in your garden.0 -

Hi, any pasta recipe that uses cream is twice as good with mascarpone
We like pasta shapes with smoked salmon and mascarpone and lots of parmesan.

my daughter makes a lovely mushroom and marscapone sauce for pasta, fry some chopped onion, add lots of sliced mushrooms and fry for a few mins, add a glass or so of white wine, garlic and herbs then stir in a tub of marscapone, heat through and you have a yummy sauce!Member 1145 Sealed Pot Challenge No4

I made a gorgeous tomato and mascarpone pasta sauce last night, but now I have almost a full tub of the cheese left over. I am TRY desperately not to turn it into a cheese cake or tiramisu, but I can't think of how else to use it in more of a main dish/savoury way?
Looking online i only seem to find pasta sauces and cheescake!0
