The pastry used in the opening post is ‘sugar pastry’.
Yes, it is a pig to roll out. I use all butter instead of trex.
Top tip. Once made let it rest over night is best but an hour or two is okay. I make sure that my work surface and rolling pin is well floured, this will also help. If doing a big pie, I always have my dish close by.

I will make half the quanitity. Do I have to measure out half an egg, or will it be ok to just use a whole one?
