Aww RIP to your lovely neighbour, I just came on to get the recipe after getting Trex last week as my workmates look forward to the Mince Pies every week, she will live on in her pastry recipe that has been shared by many over the years. This truly is the best mince pie recipe ever!!!:TGratitude is the best Attitude :T

It's getting to that time of year and I was searching for this thread. I see it hasn't been used since last Xmas, so I thought I'd bump it up to help others find it again.
This pastry is lovely, though I use 50:50 butter and lard instead of the Trex

i have had really good results with this recipe, one of my colleagues said they are better than Waitrose!
I think it is similar to OP but uses butter not Trex

I'm a 12, 8 and 4 girl.
12 oz plain flour
8oz butter / marg
4 oz sugar
This can be made in a mixer or can be had done very easily by hand, just keep combining together until the dough appears.
Absolutely delicious shortbread style melt in the mouth pastry for mince pies or otherwise.0 -
We're in the middle of our annual mince pie making marathon. It always surprises me how many pies I get out of this mix. I've made 2 dozen, and there's more than a third of the dough left.
I use half lard, half butter instead of the Trex0 -
I am not in the slightest bit hungry but have been dreaming of scoffing a mince pie for the last 20 minutes. Unfortunately, that would mean getting off my a*s and buying some, or making them from scratch (I have the ingredients)

I've just made two batches of these but how does everyone make sure that the pastry is even? Do you have rolling pin guide things?
Also I only got 24 out of this amount of pastry (and 10 mini ones). I've no idea how you'd get 3 dozen!0 -
I used this recipe and got four dozen mince pies out of it. Quite a sweet pastry, but very good. Not too difficult to handle either.0
