  • Huge thanks for this recipe - unbelievably light pastry. I was concerned that not using my food mixer would cause issues (a bit hamfisted) but it was beautiful. :j
I made my own mincemeat this year and wanted something special to wrap it in - thank you so much, and to your neighbour my thoughts and prayers.

Just a small addition to the pies - grated 100% chocolate!! If you have seen the 'Willy's Wonky Chocolate factory' programmes on ch4 you will know what I mean - added the one with the citrus flavour - added an additional wow factor.:D :D

Thank you once again and Merry Christmas:T
Thanks to this fantastic site and it's amazing people, we have paid over £63, 000 off - just over half way!!!
    :T THANK YOU:T

Just made these yesterday, well I have to say the kitchen air was blue for a while as I found the pastry extremely tricky to work with (a weird combination of too sticky AND too flakey) - I was muttering awya to myself and my three year old said, mummy, ae you talking to yourself? LOL! But the taste was fabulous. I've always used Trex in my pastry but this particular recipe was superb. I might cut down the sugar a bit as I found it a little too sweet, but otherwise, divine, almost biscuity.

ok nm found my own substitue, it doesnt make as many mince pies as it states in op and i rolled the pastry very thin

I think this depends on the size cutters you use - I've often got 3 dozen pies + a couple of turnovers out of this mixture. But I use the smaller cutter for the pastry lid rather than the medium one.
  • I've just found this thread and read the lot. I'm now surprised at WHEN it started!! Amazing!

Researcher, what's the lady's name. I think it would be fitting to call it "XXX" pastry, or "XXX" pies. My 11 year old son often asks me to make Twink's Hobnobs and I think it would be so fitting to name these pies.

I'm completely rubbish at pastries, their success is NEVER on my table. Here's hoping. My DH likes my baking (gingergreads, etc) but never pastry. If I EVER get to grips with this Christmas malarky I might give Santa a treat this year.

Well, I really hope you have a great success with these - I can't see why not. I'll think about naming them but as it's not my name I'd have to check first.

Yes, isn't it lovely how long this has thread has been active - it just proves that you can't keep a good recipe down :D
  • Hi All,

I found it difficult to work with, but well worth the effort! I can't believe how nice these taste!
thank you thank you thank you!!
  • This pastry is so easy so long as you roll it very thin. My first time for using Trex too. Thank you very much Researcher. xx

Wonderful thank you. Rolled the first lot too thickly - but after that they were fantastic

Not sure if this has been answered already but I've used half the pastry and don't really need the rest at the moment.....can it be frozen uncooked?
We don't need to do it perfectly - good enough is exactly that GOOD ENOUGH.
