    Yep - I have 11 jars of it at home from last year when it was 23p in Jan! (BBE 2010 I think). It's great :) I use it for this mainly:

    It's a simnel cake recipe, but I make wedding cakes fairly frequently always use this one as it comes out so soft. You can omit the marizpan if you like - tatses fine without. I'm going to use it for Christmas cake this year to take out to OH's parents in Germany :)

    Thanks so much for this recipe Researcher, I always thought I hated mince pies until I had my auntie's HM ones and have been dying to try making my own, bought some mincemeant today (though OH wants me to put actual minced beef in them!)
    I used to make amazing pastry until I had an "incident" where I was baking a quiche and the pastry went wrong 3 times, I threw it all over the kitchen in a temper and haven't made any since. This may be the recipe that gets me back into pastry!
    Only problem is I daren't make any until nearer xmas as I'm on a diet and if I bake stuff I eat it! Have given myself a week off for xmas excessing so as soon as it comes I'll be baking away.

    Many thanks for the recipe Researcher.

    The plan was to make enough pastry for 36 pies, cook 12 and freeze the rest but within 5 minutes of the first 12 coming out of the oven my mum told me to get back in the kitchen and cook the rest, claiming it was the best pastry she had ever tasted.

    I'm delighted that so many of you are enjoying this recipe. It's a really nice feeling to know that something that I first posted 2 years ago is getting tried by a whole new bunch of mse'rs, and they are still enjoying it!
  • I eventually got round to making a batch of these today - OMG :eek: They are so scrummy. The pastry is thin and crispy and melts in the mouth!

    I made a tray of 12 in deep fairy cake tins to make "deep fill" style pies IYSWIM, and used golden caster sugar.

    I have enough pastry left to make another 12 mince pies, which I will freeze. (Although I may just make another batch now, as they are that nice! :o )

  • hey, just made a batch this afternoon using this recipe and OMG!! they are the most gorrrgeous mince pies i have ever tasted! my grandparents popped round for a coffee and my grandad scoffed 3 in the space of 15 minutes and has took 6 home with him he loves them this much. I am going to attempt to make them using wheat free self raising flour now so my boyfriend can try them otherwise he will be moaning he is missing out haha!

  • i halved all the quantities just incase they didnt turn out right but i forgot to only use half an egg lol seems ok so far, took out one tray tho and 2 split :( not sure if thats from too much egg or cos i made them a little thin,j just tasted the split ones and they taste just as nice! i think my boyfriend owes me for this one :rotfl:

    Just made my first ones today, absolutely gorgeous pastry and I added a little brandy and cinnamon to the mincemeat (Lidl's). Only used half the pastry and made 24 with little star cut out pastry tops, they are small though so that's probably why I got so many.
    Only problem is I burned the second lot as I was on the phone to my Mum telling her how fab they are!
    Totally ruined my pre-Christmas diet (I had been putting off baking as I knew this would happen) and ended up eating.................8!:eek:
