The best mince pie pastry ever?

    I was planning on making some mince pies today using the recipe, do you think i could freeze a batch uncooked - tin the tin then turn out a bag, so there just ready for baking?

    Actually, the original recipe did have mince in it and I've done a batch for this year. I'll let you all know how it turns out as it needs to "cure" for a few weeks yet (will cook them Xmas eve).
    I have to be honest though, I think it sounds disgusting but as I don't like mince pies and am only making them for DH I wont have to eat them. LOL

  • I feel really cheeky for posting this on this thread but didn't see the point in posting a new thread... has anyone made mince pies with filo pastry?

    All my family are on a diet this Xmas (excluding Xmas day because some things are impossible) so I thought that would save quite a few calories... do you think this would work/fail?

    Good question as I have a packet in the fridge, although I'm itching to make the trex pastry ones too...............and I'm on a [STRIKE]diet[/STRIKE] healthy eating plan too.:D

    I know, and OH really wants me to make some! Do you still put all the fruit in too? I think I'll hold off trying until we find out how yours turn out:rolleyes:

    The burned/overcooked mince pies from my second batch yesterday turned out to make fantastic biscuits once they'd gone cold, very nice dunked in tea! I have to say I did make pretty small shallow ones, almost more like tarts with star shaped "lids" on so they wouldn't turn into biscuits with deep ones but very tasty anyway.
    I have to admit to not having got any into the freezer yet!
    made a batch this evening and cooked them for less time and the pastry was just perfect!

    Yeah, fruit as well. Here's a link to the recipe from the River Cottage Year (first recipe). I have the book so I did the unadulterated version

    I made a batch on Wednesday to try out the recipe as I needed some to take to work, but also made a couple of deep filled ones in a muffin tin for OH (he has been asking for some "like you get from supermarkets") Put one in his lunch box Thursday morning and came home to find him on his knees and proposing marriage! :rotfl:

    Spent this morning making ours and some for my OHs mum. More brownie points for me!!

    Hi researcher, do I have to make a hole in the mincepies as well or is it just for the apple pies? My mum used to use a fork to make holes in the top of her mincepies but I noticed you didn't include that in your recipe?:confused: Sorry if it's a daft question!
  • i made a hole on my batch sweetserendipity mainly because i made some mince pies before these, using mrs crimbles pastry making kit and didnt think to put a hole in.... some of them were starting to over flow lol
