    I used Delias recipe last year and it was lovely, just search for Christmas Mincemeat on www.deliaonline.com I have a jar left over that still looks edible and when I made it I put an extra glug of brandy on top of the baking parchment as I didn't have wax disks big enough.

    For 37 years I've made mince pies with a recipe which is all-butter, an egg, ground almonds, lemon zest, needs resting and is an absolute PIG to roll out (tho tastes lovely), but today I tried these with half Trex and half sunflower marge and they were so easy and quick with no resting, and taste really good so thank you very much - will not be doing ground almonds, lemon zest etc again ! :beer:

    Wasn't brave enough to try this recipe last year as I'm rubbish at pastry and usually rely on ready made but thought I would give it a go and all I can say is......

    Its so scrummy and light, most partry is a bit too rich and heavy for my liking but this is gorgeous. I'm abandoning ready made pastry now and sticking with this recipe! Savoury as well!

    I'm a real beginer with pastry, I'm scared of it:o
    But I want to give HM mince pies a go.
    Did then a couple of years ago & the pastry was too thick & they were horrible.

    I'll be giving these a go over the weekend, I've never had much luck with pastry as my hands are too warm :o

    When it comes to freezing do I cook the mince pies then freeze or do I freeze them raw and cook when defrosted?
