i'm not getting this result at all :-( ... mine's doughy when cooked and very. very difficult to roll out when uncooked.
Compared to a shortcrust pastry this is more difficult to roll out - you need to use plenty of flour, but when cooked it should be light and crispy, certainly not doughy. Are you using Self Raising flour and rolling it quite thin as it does 'rise' when baked?0 -

Her DIL lost her fight a few weeks ago, but her DS is still in there fighting. She herself is as independent as she can be, but she is in her mid 80's and the last year has taken it's toll. Although she tries to be positive it is very tough.
