i actually printed off this recipe a while ago,but got round to doing it for the first time on saturday. 3 dozen mince pies later..... the verdict by everyone is they are fab.:j:j

Well, the update is although both were given terminal diagnosises they are both doing well at the moment. So again a big thanks to everyone for all the positive energy that has been sent their way.0

Hello researcher - I just wanted to add my thanks to you (and your kind neighbour) for this recipe. I recall it from last year and I got many compliments when I tried it out. I also passed it on my mother (who's been making pastry for about 80 years now) and she was very impressed too. I wish I'd thought to thank you earlier but I'm more of a reader than a poster on these boards. I do hope this lady's son and daughter-in-law continue to do well; my thoughts are with them. A quick update:
someone PMed me and asked about freezing - well I can definitely confirm that the cooked pastry freezes brilliantly and I've eaten them from frozen both defrosted and reheated, both ways were excellent.
Also, I made an apple pie with this pastry and OH reckons it was the best ever! I didn't cook the apples in advance but sliced them, added some sultanas, tossed with sugar, cinnamon and a tot (slug:D ) of whisky. I cooked it at 180c for about 35 - 40 mins. It really was excellent, even if I do say so myself !0 -
Just wanted to share a little tip when making pastry.
Roll out pastry on a floured piece of cling film then flour the pastry a little and place another piece of cling film over the top.
It makes it easer to roll out as it doesnt stick to the rolling pin!
Peel the cling film off ocassionally between rolling to stop it stretching too much...i have always rolled my pastry this way as it creates less mess:rolleyes:

Hi there,
Have used this recipe consistently to wide acclaim throughout December, but only just git round to reading the whole thread.
My prayer are with your neighbour, her son and DIL and I do hope they manage to enjoy Christmas.
I hope she knows how much joy her recipe has brought to many this year (and last year too by the looks of it)

Thanks for your kind thoughts Crystal and you've prompted me into an update.
Sadly, it isn't good. Both are very unwell and my neighbour is spending Xmas day with her son and DIL knowing it will be the last for both of them unless there is a miracle (but where there's life there's hope). She has made very few mince pies herself this year as her heart isn't into it.
But a quick reminder to everyone - this Christmas, when you're wound-up and angry because someone spill or dropped something, said something without though, behaved badly, drank too much and fell asleep when they should have helped etc, etc. Forget it.......move on and be thankful they are there with you. This is a time to count blessings :A0
