I love love love weetabix brownies, made 5 batches for fetes and craft shows over the weekend and they AL sold out with many people coming back for seconds!
I dont have scales so use cups:
1 cup of SR flour
1/2 cup caster sugar
2 tbsp cocoa powder
100g bar of tescos milk cooking choc (39p) chopped into "chips"
adding a dollop of marg ~ 100g = 2/5 small tub
1 egg
I have never had any problems of the mixture being dry etc.
As I have made so many i have a big jar that i keep the igrediants mixed up in so when I want to mke them I just pout out the jar and add marg & egg.
Would make a great gift for bdays etc!

I've made my weetabix brownies and they're really, really scrumptious. And this is from someone who doesn't - sorry didn't - like brownies. This recipe is going in my favourites file now! 1sttimer , can't take credit for it I'm afraid, it's been in the OS receipe library for about two or so years...
I loathe weetabix & couldn't justify buying a pack to make it up before now. I'm setting aside tomorrow to make it & will feedback - BUT :eek:have made a couple of discoveries which in turn lead to more questions:
*I don't have any cocoa powder: would Charbonnel & Walker drinking chocolate do just as well?
*I don't have a pyrex dish or square baking tin - can I use my roasting tin to make a double quantity?

Drinking chocolate is sweetened - I would reduce the sugar content. Not sure by how much though - let me see if I can drag something up.
Your roasting tin should be fine!0 -
I can't find anything specific (someone else might), but I would try using an extra tablespoon on drinking chocolate and a tablespoon less of sugar. Ish! I'm sure you won't go too far wrong.0
