I have jut been doing a store cupboard inventory thingie and found some Weetabix minis (choc chip) which the kids wouldn't eat. They are in a lock & lock cereal box so are still relatively fresh, but there is loads of them. Could I use 4oz of them instead of 4 weetabix?

I dont see why not, they might even taste more yummy with that extra bit if choccy in :D . Just be sure to match like for like weight wise. Let us know how they turn out.
  • At least this isnt' the SW recipe that has tons of artificial sweetener in it.......... I might even make these! (But is it OS if I have to buy the weetabix specially?)
  • I made the Brownies with the weetabix minis but I think I left them in the oven a bit too long as they went a bit crumblier than normal - kids liked them though! I am thinking of crumbling them up totally and then mixing this with some mini marshmallows and some melted chocolate and making a sort of fridge cake, as that will travel better for lunchboxes. What do you think?

Well, I have just put a tray of these into the oven.

Although it almost fell at the first hurdle.
I returned to the kitchen just in time to find Mr Twit helping himself to the dry mix.....mmmm that's nice, what's it for......

Will let you know how they turn out.

I think that sounds good, but I wonder if they'll be a bit dry? I do a chocolate biscuit fridge cake with digestives, but I can eat more 'dry' digestives than I can mini weetabix ...

Well, the brownies turned out fab.
I did add the extra egg, as I get free range ones, which I buy from a friend and they are only small but incredibly fresh.

I might use a slightly smaller tin next time, as mine was a bit bigger than the one used in the original recipe.

The brownies are slightly crispy on top but squidgy in the centre....perfect.

Looks like it's 4, but if you google gas oven temperature conversion you'll get a number of online charts!
